Coconut, Dates, Nuts Cookies


Hai friends, I wishing You  a "MERRY CHRISTMAS and HAPPY NEW YEAR"... This Cookies made for this Christmas  celebration, with wheat flour / atta and all purpose flour / maida with dessicated coconut, nuts, dates and coconut oil.. Cookies for every vaccations makes kids happy and enjoyable... The cookies came out very good and delicious.. whole family like them... 



This cookies has everything going in them, coconut, nuts and dates.. Best to put a couple in your kids lunchbox, plus they taste great.. The dates when they bake get almost it change into candy like structure.. So you like will love it for sure... I made this is a eggless cookies and taste of the coconut and coconut oil makes aromatic taste to the cookies in each and every bite.. So i hope that you must try this recipe and let me know how it's comes out from you....



Preparation time : 10 mins
Baking time : 15 to 20 mins
Makes - 15 cookies

INGREDIENTS :

All purpose flour / Maida - 1/2 cup
Whole wheat flour / Atta - 1/2 cup
Dessicated coconut - 1/2 cup
Mixed Nuts - 1/2 (chopped finely)(I used cashews, Kishmish, almonds, pista)
Dates - 1/2 cup (chopped)
Sugar - 1/2 cup 
Coconut oil - 1/2 cup
Milk - 1/4 cup (adjust)
Baking soda - 1 tspn

METHOD :

  • Take all purpose flour, wheat flour in a bowl..
  • Add in Baking soda, coconut, nuts and dates in a bowl and mix well..
  • Now add in oil, sugar and mix well.. Once it is all combained add the flour mix in..
  • Add some milk if the mixture is too dry and make a dough.
  • Preheat the oven to 180 Degree C.
  • Take small portion out it and shape into ball.
  • Arrange the balls in a well oiled tray and press it with your finger to flatten it slightly.
  • Bake it for 15 to 20 mins till turns golden.. 
  • Remove and let it cool down...
  • Serve with a glass of milk..

Take all your ingredients
Take both flour in a mixing bowl
Add in dessicated coconut
Mix well
Add in chopped nuts
Chopped dates
Now it's done
Mix well
Now it's done
 Add in coconut oil
Add in sugar
Drizzled some milk
Take a small portion of dough, roll it into ball
Brush it with some oil
Arrange it in a oiled baking tray
Flatten it slightly
Do the same to every cookie
 Bake it
Allow it cool completely
 Let's celebrates in this christmas..

Here Iam with my Lunch menu - 1st for the lunch menu series.. This can be in my mind for long time, so made this today.. This can be brunch, lunch or you can make for dinner too... Easy and intresting to make as its different from regular cooking.. I thought of posting some traditional south indian menu in my blog but soon i post more lunch idea for you...

Red Wine Chocolate Cake / Chocolate Cake With Red Wine


Wow... This X-MAS vacation has put me in a baking overdrive, insprite the fact that it is super moist cake... I guess it's the feeling of festivity in the air... the desire of the smell of spices and cakes that makes it like this.... Here find how to prepare christmas recipe wine cake in simple way...


Yesterday, I wanted to bake something different, in my head I clearly wanted something chocolatey and something boozy, yet rum was too boring.. Tried this cake with red wine and chocolate.. I think it has the potential to be the star of any party.. Different from usual fruit cake yet has all the elements of the hoilday celebrations...


Here the cake is sprinkle with icing sugar on the top which gives delicious taste when we have it.. The flavour of red wine and cinnamon powder gives excellent aromatic taste to the cake... My kids loved it well.. You can prepare this cake in this X- MAS or NEW YEAR.. So i hope that you must try this recipe and let me know how it's turns out from you.....

INGREDIENTS :

All purpose flour / Maida - 1 cup
Unsalted butter - 1/3 cup
Brown sugar - 1 cup (Demarara Sugar)
Egg - 1 
Red wine - 3/4 cup (you can go upto 1 cup)
Vanilla essence - 1 tspn
Cocoa powder - 4 tbspn
Baking powder - 1 tspn
Salt - 1/2 tspn
Cinnamon powder - 1/2 tspn (i use cinnamon sticks and blend it)

FOR TOPPING :

Icing sugar - as needed

METHOD :

  • Preheat the oven to 180 degree C..
  • Line the bottom of a round cake pan with parchment paper.
  • Sift the flour, cocoa, baking powder, cinnamon and salt together.. keep aside..
  • In a large bowl, using the eletric beater, cream the butter and sugar together..
  • Continue till light untill fluffy, about 3 - 4 mins..
  • Add the egg and beat till well mixed.
  • Add the red wine and vanilla, beat for another min or so..
  • Fold in half the flour mixture.. When combained, fold the rest in...
  • Spread batter in prepared pan.Bake it for 25 to 30 mins..
  • Or untill a cake testerinserted into the canter comes out clean..
  • Let it cool completely before serve..
  • Sprinkle some icing suagr on the top of the cake and slice..
  • Enjoy..


PICTORIAL :


Take all your ingredients
Now take flour in a sifter
Then add in cocoa powder
Then add in salt
Add in baking powder
Crushed cinnamon sticks
Sift it in a paper, keep aside
In a bowl add soften butter in large bowl
Brown sugar
Beat well till smooth
Now it's done
Add in egg
Beat well
Cream it well
Once it fluffy
Add in red wine
Some vanilla
Beat well
All are combained
Now done
Add in half of the flour mixture
Fold it gently
Add in remaining flour
Fold well
Now the batter is done
Line the round baking pan with parchment paper
Pour and spread the batter evenly
Pop it in the preheated oven
Now it's done
Slice the crispy layer of the cake
Allow to cool completely
Take chat paper 
Cut it into square
Cut it into long strips
Palce the cool cake in parchment paper
Line the chat paper stips like this
Another strips to cross it
Take a sifter over the cake 
Spoon some icing sugar 
Drizzled over the cake
Sprnkle all the sides
Now it's ready
Now carefully remove the one side of the chat paper
Now another stips too
See how the cake is..
Wow... mum mum mumm
Yummy
Slice and serve
