Simple Sweet Corn Fried Rice


Sweet corn fried rice is very easy, quick, simple recipe made within jiffy... I made this for my today's lunch with some crispy french fries, I had a pack of sweet corn lying in the freezer for one week, So I decided to plan making this fried rice for my son, and he loves to have Steamed pepper masala sweet corn with a cup of milk in the evening...



Here I used chopped garlic and they are fried in oil make the rice more falvourful and aromatic one... Kids love and enjoyed it...

INGREDIENTS :

Onion - 2 (small, chopped finely)
Garlic - 4 (cholves, chopped finely)
Capsicum - 4 tbspn 
Sweet corn - 3/4 cup (frozen)
Spring onion - few (chopped)
Pepper powder - 1 tspn
Soya sauce - 1 tspn 
Vinegar - 1/2 tspn
Salt - as needed
Oil - 2 tbspn

METHOD :

  • Soak the basmati rice for 15 mins and cook it as per the method given in the link..
  • Heat pan with oil, add in garlic and toss it lightly brown..
  • Add in chopped onion, capsicum and fry along with garlic..
  • When they became transparent add in sweet corn and toss well.
  • Now sprinkle some water, cook it low flame for 3 mins
  • Till the corn became soft and cooked..
  • Add in salt, pepper powder and mix it well.
  • Cook it for 2 mins and add in cooked basmati rice,
  • Mix it evenly and add in soya sauce and vinegar..
  • Give it a quick toss and add in chopped spring onions.
  • Combained well with spatula and transfer them to a bowl..
  • Serve hot with ketchup or french fries..
  • Enjoy...

Take all your ingredients
Cook the rice as per the method
Heat a pan with oil
Add in chopped garlic
Once it changes it colour
Add in chopped onion and capsicum
Toss it well till they transparent
Once it toss well
Add in sweet corn
Sprinkle some water, toss well for 3 mins,
Now it's almost done (cooked)
Add in salt
Some pepper powder
Toss well for 2 mins in low flame
Add in cooked rice
Mix it evenly
Add in soya sauce
A dash of vinegar
Mix it well
Add in chopped spring onion
Mix it well
Transfer them to a bowl
Serve and enjoy

Chilli Masala For Sambar And Poriyal


Chilli Masala is also called as masala for sambar and poriyal recipes, which is a important ingredients in most of our kitchen, especially in south indian kitchen ... This excellent recipe is from my mother and gives really a good and traditional sambar, This aromatic masala is used in making sambar which is especially in south india village side..

Cumin seeds - 1 tspn
Garlic - 2 cloves
Shallots / Small onion - 10 to 12 nos

METHOD :

  • Peel the skin off shallots and garlic, keepaside..
  • In a blender add in chilli, garlic and cumin seeds..
  • Pulse it lightly and add some water and make it a smooth paste..
  • Add in shallots / Small onion, again grind into a smooth paste..
  • Noew transfer them to a bowl..
  • Now use it for sambar and poriyal recipes..
  • Enjoy the flavour..

Take chilli, garlic and cumin seeds
Add them to a blender

Add in some water
Make it a smooth paste
Add in shallots and grind it
Now the masala is done

Homemade Pav Bhaji Masala Powder


Some Spices that is used to make pav bhaji, which is a popular street food in india... Here the recipe is how to learn homemade pav bhaji masala powder... Bombay / Mumbai is well famous for it's street food recipe like Pav bhaji, Pani Puri, Vada pav, Dahi vada, etc... It is comabination of few indian spices mixed into one, roasted and graind them.. 


Pav bhaji Masala can be easily brought at your local indian store.. Last week When I was browsing, I saw a pav bhaji masala powder recipe and instanly tried it... It is super flavourful and aromatic than the store brought one..

INGREDIENTS :

Dry Red chilli - 8 to 10 nos
Cinnamon sticks / Pattai - 5 cm (big pieces)
Fennel seeds / Sombu - 1 1/2 tbspn
Cloves - 10 to 12 nos
Green cardamom / Elachi - 6 to 8 nos
Cumin Seeds / Jeerakam - 2 tbspn
Coriander seeds / Malli - 1/4 cup
Kashmiri Chilli powder - 2 tbspn
Turmeric powder / Manjai podi - 1 tbspn
Amchoor powder / Dry mango Powder - 2 tbspn

METHOD :

  • Take all the ingredients in a thick bottom pan except the powdered spices..
  • Dry roast in low flame for 6 to 7 mins..
  • Now add in kashmiri chilli powder, turmeric powder, amchoor powder..
  • Mix well for 30 sec, and remove it from the flame..
  • Now take them in blender and powder it..
  • Store it in air tight container for a week...
  • Enjoy the flavour of the masala by using it..


PICTORIAL :


Take all your ingredients
Take whole spices powder in a pan
Dry roast it for 6 to 7 mins
Toss in low flame
Once the colour is changed
Add in turmeric powder
Add in amchoor powder
Add in Kashmiri chilli Powder
Toss well for 30 sec, remove them and cool completely
 
Remove them to a blender
Powdered them.. masala done
Store it in air tight container
Enjoy..
Use it for recipes..
