Chettinad Mutton Varuval


Chettinad cuisine is most popular in southern part of india and in fact it has gained immensePopularity if you consider the sheer number of ' chettinad ' style restaurants in chennai. It's famous for spices and unique flavour. This is a common south indian dish you can found in any south indian restaurant. 


The chettinad mutton varuval is a  non - veg dish that cannot resist. I am not sure how far this recipe is authentic, pertaining the chettinad cuisine, as i blindly followed by my husband's sister for the recipe and method while it was getting done.


The secret of this dish which allows the spices to seep in the tender flesh making it delicious. It best match with the biryani and ghee rice.

Preparation time : 20 mins
Cooking time : 30 mins
Serve - 4 

INGREDIENTS : 

Mutton - 1/2 kg
Ginger garlic paste - 1 1/2 tsp
Onion paste - 2 tsp
Tomatoes - 3 (chopped)
Coriander powder - 1 1/2 tsp
Salt - as needed
Coconut oil - as needed
Coriander leaves - few (chopped)

FOR FRYING AND GRINDING :

Dry red chilli - 10
Cashew - 8
Fennel seeds - 1/2 tsp
Cinnamon - 2 small sticks
Cardamom - 1
Star anise - 2
Nutmeg - 1 
Poppy seeds - 1/2 tsp
Coconut oil - 1 1/2 tsp

METHOD :

  • Wash and clean mutton and cut into small pieces and add it to the cooker along with 1 tbsp of salt.
  • Whistled it for 6 and keep aside.
  • Fry the frying items given under the lable " FOR FRYING AND GRINDING " and grind it into fine paste and keep it seperate.
  • Heat a kadai add coconut oil, ginger garlic paste and onion paste and toss it well in the oil.
  • And then add chopped tomatoes and fry till mushy.
  • Then add in coriander powder and grinded masala and saute it well.
  • Now add cooked mutton along with the water and add salt.
  • Let it boiled for 10 mins, untill the oil seperate on the top.
  • Atlast add chopped coriander leaves and serve it hot....



PICTORIAL :

Wash and cut the mutton into small pieces
Mutton to the cooker
Some water
Some salt
Whistled it for 6
Now it's ready set aside
Take your frying items
Add oil in a pan
Add in all spices
Fry them 
Grind it into paste
Take your ingredients
Add oil to your pan
When it heated
Add in onion paste
Ginger garlic paste
Chopped tomatoes
Coriander powder
Toss well in the oil 
Add in grinding paste and
 toss it in the oil for 5 mins
Now add cooked mutton 
Then add in salt
Leave it, untill the oil floated on the top
Now add in coriander leaves
The yummy varuval is ready 
Serve hot
