South Indian Style Adai Dosai / How To Make Adai Dosa


Adai is very popular South Indian breakfast recipe made with dal and rice.. It is very healthy than the normal dosa and well goes with coconut chutney or aviyal.. Usually this dosa batter little thicker than our normal idli dosa batter, so it became soft and spongy... 


The combination of adai is both the rice were soaked with colourful lentils and then they are ground to form a thick batter and later temper with onion and curry leaves... It really wounder with aviyal when I pairing, it seems to works well.

INGREDIENTS :

FOR BATTER :

Toor dal / Tuvaram Paruppu - 1/2 cup
Chana dal / Kadalai Paruppu - 1/2 cup
Idli Rice - 1/3 cup
Raw Rice / Pacharisi - 1/2 cup
Urad dal - 1/2 cup
Green chilli - 5 to 6 (chopped)
Water - as needed

FOR MAKING DOSA :

Gingelly oil - 2 tspn + making dosai
Onion - 1 (finely chopped)
Curry leaves - handful (chopped)
Ginger - 2 tspn (chopped)
Asafoetida - 1/2 tspn
Turmeric powder - 1 tspn
Salt - as needed

METHOD :

  • Soak both rice and dal in a bowl for over night..
  • In another bowl take urad dal and soak for over night..
  • Now drain the dal, add to the grinder and add in chillies, make it a smooth paste by adding water 
  • When it's done add in soaked rice, lentils mixture and make it a smooth..
  • Add some water and make it a smooth batter..
  • Transfer them to a bowl, Keep aside..
  • Heat a pan with oil, add in onion and curry leaves, toss well for 3 mins..
  • Add a pinch of asafoetida and chopped ginger, mix it well.
  • Pour this to the batter and mix well.
  • The batter is little thick than the dosa batter..
  • Heat a tawa and take a ladleful of batter and spread it evenly like dosa..
  • Sprinkle some oil on the edges and cook for a mis till golden brown.
  • Flip it over and cook another 2 mins..
  • Remove it to a plate..
  • Enjoy..


PICTORIAL :

Take your measure cup
Take both dal in a bowl
Take them in a bowl
Add in 1/2 cup of raw rice
Take 1/3 cup of rice
Combine them
Take 1/2 cup of urad dal in a bowl
Soak them for over night or 8 hrs
Now they are soaked well
The urad dal too
Drain the water from it
Add them in a grinder
Add in green chillies
Grind them
Now they grind well
Add some water
Now this is a correct consistency
Look that the urad dal mash well
Drain the water from rice
Add them to the grinder
Grind it
Now they combained well
Add some water
Now it's done, into a smooth batter
Like this consistency
Remove them in a bowl
Chopped some onion and curry leaves
Heat a pan with oil
Add in onion and curry leaves
Toss well in oil for 3 mins
Add in asafoetida
Mix it well
Add in ginger and mix it well
Now add to the batter
Add in salt
Add some turmeric powder
Add fresh grated coconut
Mix it well
Batter should be little thick than the dosa batter
Heat a tawa 
Take a ladle ful of batter
Over the tawa 
Spread well as we do for dosa
Perfect shape
Add some oil
Flip it and cook on both sides
Remove them to a plate
Serve hot with aviyal
