Amma's Puli Kuzhambu Recipe


Puli kuzhambu recipe have became a routine at home these days.. After making Ennai Kathirikkai Puli Kuzhambu that is my favourite Kuzhambu... But when amma make this along with some white rice, a simple dal, and potato puttu recipes... for me in summer hoilday iam the lover of that meals recipe.. soon i post it for you.. 


South indian as well as my village style Puli kuzhambu is simmered in a rich tangy tamarind gravy.. Serve hot with hot white rice and papadum without any sidedish... There are some more version of puli kuzhambu in my blog..

INGREDEINTS :


Turmeric powder - 1 tspn
Tamarind - small lemon or gooseberry sized
Salt to taste 

TO TEMPER :

Gingelly oil - 3 tspn
Mustard - 1 tspn
Urad dal - 1/2 tspn
Shallots / small onions - 4 (finely chopped)
Curry leaves - few

FOR GRINDING :

Coconut - 1/4 cup (grated)
Shallots / small onions - 9

Dry roast :

Red chilli - 8 nos
Coriander seeds - 2 tsp
Cumin seeds - 1/2 tsp
Garlic clove - 1

VEGETABLES :

Lady'sfinger - 3 (cut into 1 inch size)
Brinjal - 4 (divide it into 4 equal parts)
Board beans - 4 (cut into 1 inch size)
Drumstick - 1 
Cluster Beans / Cheeni Avarakkai - 3

METHOD :

  • Dry roast the spices and cool it for 5 mins.
  • Now add to the blender and grind, along with that add in shallots and coconut. Again grind it into fine paste and keep aside.
  • Soak tamarind in 1/4 cup of water and extract pulp.
  • Cut all the veggies.. Keep aside.
  • In a pan add in gingelly oil add in lady's finger and toss well.
  • Now add in all veggies and some water..
  • When it bring to boil add in a spoon of turmeric powder..
  • When the veggies is half cooked add in grinded masala paste and mix well.
  • Now add in tamarind water and allow to boil..
  • Then add in some salt..
  • Simmer the stove to float oil on the top..
  • In another stove add in gingelly oil, mustard, urad dal and allow to crackle..
  • Then add in chopped shallots, curry leaves and toss it till golden brown..
  • Now pour it to the kuzhambu and mix well. 
  • Yummy puli kuzhambu is ready to serve..
  • Enjopy with white rice and papadam..

PICTORIAL :


 Prepare your veggies
 Take dry items
 Roast them lightly
 Now it's done allow to cool
Grind them in a blender
 Now take coconut and shallots
 Add to the blender and grind
 To form a smooth paste
 Heat a pan with gingelly oil
Add lady's finger and toss
 Add in all veggies
 Some water
 Allow to boil
 Add in turmeric powder
 Give a mix
 Then in masala 
 Now pour tamarind extract
 Give a mix
 Add in salt
Boil till the veggies is cooked
Simmer the stove
 In another pan add in mustard
 Add in shallots
 When it became light brown
 Add in curry leaves an dtoss till brown
 Pour it to the kuzhambu
 Now it's ready
 Serve hot

Arisi mavu puttu


This is one of the best combination to eat puttu, If you have not tried this yet please give it a try... Puttu is one of the famous keralan dish... They usually have puttu with fish curry and kadala curry...My hubby's all time favourite dish, he always prefer to make this breakfsat once in a week...


I used a typical puttu kolal for this, but if you don't have that you could use a small bowl and put the coconut and flour mixture in layers and steam it, it will still come out great... But one thing that you wont get the shape... The combination of puttu with sliced banana and Green gram Sundal makes the breakfast yummy and delicious....

INGREDIENTS :

Store brought rice flour / Arisi Mavu - 2 cup
Salt - as needed
Fresh coconut - 1 cup (grated)
Coconut oil - 1 tbspn
Water around 3/4 cup or as needed

ACCOMPLIMENTS : 

Banana - 2 (sliced)

METHOD :

  • Take rice flour in a bowl.. Add in salt and mix well..
  • In a sauce pan add water and a spoon of coconut oil and allow to boil..
  • Gradually sprinkle in the water and rub with your fingers till it form coarse crumbs... It should be slightly wet..
  • Now take a puttu kolal, first add some fresh coconut, then add the flour mixture and again coconut and continue till top like this...
  • Place this in the steamer or vessel where we will put this puttu kolal.. and cook for 10  mins..
  • Now slowly remove ot by pushing the puttu kolal with a spoon from the bottom...
  • Serve it hot with cooked payaru, and sliced banana..
  • Other also have it with papadum....

PICTORIAL :


Take flour in a bowl
Add in salt and keep aside
Now in a sauce pan add in water
Then add in coconut oil 
Allow to boil
Then pour it into the flour mix
Pour lightly
Rib with your hands
It should be wet and coarse
Now take flour mix and grated coconut
Take your puttu kolal
First add some coconut
Then add in flour mixture
Then sprinkle some coconut
Add some rice flour
Now coconut
Cover it with lid
Place the kolal on top and steam
Now it's done
Now slowly push it from the bottom
I prepare some Green gram sundal
Plated with payaru and sliced banana
Sprinkle some sugar on the top too
