Veg White Briyani



White briyani is very yummy and delicious recipe which made with vegetables and they are cooked in milk just like pulao.... I make this veg white briyani when ever I feel cooking something simple as one pot meal... This goes well with any gravy like Paneer butter masala or Egg thooku kind of side dishes... Kids loves this very much as well... Soon i post Egg thooku / Egg masala for briyani.... keep watching my blog....



Here i have added milk for this briyani but you can also added coconut milk or you can make it plain too.... Normally we cook pulao which we cook along with vegetables which makes colour of the rice little bit yellowwish. But here this is easy way of making veg briyani pure perfect white colour.... This makes a great lunch box recipe too... I know many of you make this, still wanted to blog this recipe here.... Might be helpful to beginners in cooking.... So i hope you must try this recipe and let me know how it's turns out from you....

INGREDIENTS :



Basmati rice - 1 cup (cooked)
Cinnamon / pattai - 2 small pieces
Bay leaf - 1
Ginger garlic paste - 2 tspn
Bay leaf - 2
Milk - 1 cup
Water - 1/2 cup
Yogurt - 2 spn
Coconut oil - 3 spn
Ghee - 3 spn
Salt - as needed
Coriander leaves - 1 cup
Mint leaves - 1 cup


VEGETABLES :  

Onion - 2 (sliced)
Tomato - 2 (sliced)
Green chilli - 3 (sliced)
Carrot - 2 (chopped)
Potato - 1 (chopped)
Beans - 7 (chopped)
Peas - 1/2 cup

TO TEMPER :

Cumin seeds - 1/2 tspn
Cinnamon sticks - 2 (small)
Cardamom - 4
Cloves - 3
Star anise - 1
Goji berries - 1

METHOD :

  • Wash and soak basmati rice for 1/2 hour..keep aside..
  • Now take a pressur cooker, Heat oil and ghee..
  • Add whole spices which i mentioned "TO TEMPER" and toss lightly..
  • Then fry the onions and green chilli till it became transparent..
  • Then add in two small bay leaves...
  • Now add in ginger garlic paste and toss along with the onions..
  • Then add in all the cutted veggies and tomatoes and toss well.
  • Now add in thick yogurt and mix well...
  • Now it's time to add in soaked rice an fry along with the veggies..
  • Then add in water and milk which is mentioned in the ingredients.. and mix well
  • Atlast add in salt, chopped coriander leaves and mint leaves ...
  • Mix well and now cover it with lid and pressure cook for 3 whistled..
  • Once it's done, mix it well and serve hot....


PICTORIAL :

Take your ingredients
To temper these spices

Soaked the rice for 1/2 hour
In a pressure cooker add in ghee and oil
Add in cumin seeds
Then all whole spices
Add in sliced onion and chilli
Bay leaves
Sliced chilli
When it transparent add in ginger garlic paste
Now add in all veggies along with tomatoes
Then thick yogurt
Toss well along with the veggies
Add in soaked rice and just mix
Now pour 1/2 cup of water
Then 1 cup of milk
Give a mix
Now add in salt
Then chopped coriander leaves
Some mint leaves
Mix evenly
Close the lid and whistled for 3
Now it's done
Fluff it lightly
Serve it in a plate
