Cauliflower Kurma For Chapathi


I usually make cauliflower kurma because i love a lot, That i even eat it for every day as accompaniment for lunch.. I much crazy about cauliflower.. many of them hate cauliflower, thare is a fair reason behind it... because of the small worms inside the cauliflower, so somebody treats that veggie as a non - veg..

The gravy is creamy because of the cashew badam coconut paste.. The milk gives a mild flavour while have it.. It goes well with roti, chapathi....I hope that you must try this recipe and comments about the dish how it's turns out from you....

INGREDIENTS : 

Onion - 2 (chopped finely)
Tomato - 3 (grind it puree)
Chilli powder - 1 tspn
Coriander powder - 1/2 tspn
Garam masala powder - 1 tspn
Cinnamon sticks - 2 small
Ginger garlic paste - 1 tspn
Milk - 1/3 cup
Kasuri methi - 1/2 tspn (crushed)
Salt - as needed

FOR GRINDING :

Coconut - 1 cup
Cashew - 5 nos
Badam - 4 nos

FOR CLAENING :

Cauliflower - 1 (chopped)
Turmeric powder - 1/2 tspn
Water - 1 cup

METHOD :


  • Cut the cauliflower in bite size pieces...
  • Just boil water with turmeric powder and soak the cauliflower florets for 5 mins... And drain it...
  • Make a tomato puree and keep aside.
  • Then in a blender add coconut, cashew, badam and make it a fine paste..
  • Now heat a pan with oil and add in cinnamon sticks..
  • Add in chopped onions and fry till transparent.
  • Now add in a spoon of ginger garlic paste and toss well..
  • Then add in tomato puree and chilli powder and give a mix..
  • Now add in garam masala powder, coriander powder and toss well.
  • Now add in cauliflower and mix along with the spices.
  • Then add in some salt, milk and mix well..
  • When it's form a thick paste add in kasuri methi and simmer the stove for 5 mins.
  • Now add in coconut paste and mix evenly.
  • If needed add some water and let it boil.
  • When it became thick gravy and oil floates on the top..
  • Swict off the flame and serve immediately.
  • With hot chapathi....

PICTORIAL :


Take cauliflower 
Cut into pieces
 
Heat a pan with water and turmeric powder
Add in chopped cauliflower
Let it boil for 5 min and drain it
Heat a pan with oil
Add in cinnamon sticks
Add in chopped onions
Now add in ginger garlic paste and toss well
Chilli powder
Add tomatoes in a blender
Make a puree
Add in tomato puree
Garam masala powder
A spoon of coriander powder
Then cauliflower
Toss lightly
Add some salt
Add in milk and give a mix
Let it cook for 7 mins
Sprinkle some kasuri methi and let it boil
In a blender add in coconut
Cashew and badam
Make a fine paste
Add into the masala
Mix well
Let it cook till cauliflower became soft
Now it's done
Serve hot with chapathi
