Vazhaipoo Poriyal / Banana Flower Stir Fry


Vazhipoo is in our recipe menu often as I love this recipe with green chilli as masala amd adding fresh grated coconut...This is my mom's recipe, when she came here with my sister in last vacation, my hubby brought this banana flower from our village.. I plan to make my normal poriyal which i have already posted in my blog..



But my mom told, i prepare this banana flower with green chilli and frresh coconut.. So i remove the big skin and take the florets found inside the bract, in the florets find a thick string in the middle and rubbery skin out side.. Remove both from each florets and chopped it into tiny bits.. Put into the water with little butter milk, This will avoid decolouration of the florets..I gave it my mom, she make it as a delicious, yummy and tasty poriyal.

INGREDIENTS :

Vazhipoo / Banana flower - 1 
Salt - as needed
Water - 1 cup
Fresh grated coconut - 1 cup

FOR MASALA :

Green chilli - 4 nos
Garlic - 1 cloves 
Cumin seeds - 1/4 tspn
Fresh coconut - 2 tspn
Shallots / Small onion - 4 to 5 nos

TO TEMPER :

Coconut oil - 2 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Shallots - 3 nos (chopped)
Curry leaves - few

METHOD :

  • Make the masala first, the ingredients given in the list " FOR MASALA" into a blender and pluse it once..Keep aside.
  • Heat a pan with coconut oil and temper it with mustard, urad dal, shallots, curry leaves..
  • When it became little brown, add in vazhaipoo and toss well in the oil.
  • For 2 to 3 mins, and add in water and mix well.
  • Cover it with lid and cook till water evaporate..
  • Inbetween toss it lightly and the water 3/4 evaporate add in salt, grounded paste..
  • Cover it with lid (no need to mix).
  • After 2 mins open the lid and give it a mix ..
  • Again, it will relase some water so cover it with lid and cook for few mins.
  • Open the lid and mix well.
  • Once it cook and raw smell goes, add in grated fresh coconut.
  • Mix evenly and serve hot..
  • Enjoy..

PICTORIAL :


Preapare your vazhipoo and chopped it
Take the masala ingredients
Take them in a blender
Pulse it lightly, keep aside
Heat a pan with coconut oil
Add in mustard seeds. allow to crackle
Add in urad dal
Add in chopped shallots and curry leaves
Toss till brown
Add in vazhipoo without water
Mix well
Along with oil
Once it mix
Add in water
Mix evenly
Cover it with lid and cook
Open the lid 
Mix it once
When the water evaporates 
Add some salt
Add in grinded masala
No need to mix, cover it with lid
Once after 2 mins
Masala blended with vazhipoo
Mix it evenly
Cover it with lid
Now it almost done
Add in fresh grated coconut
Mix well.
Done
Transfer to the serving bowl

Prawns With Egg Fried Rice / Shrimp Fried Rice


Prawns fried rice is a quick easy and flavourful indo chinese recipe.. Fried rice is something that I made on that day, i just throw few basic ingredients I have on hane a quick, fuss free, one pot meals...I usually make some prawns recipes in my blog but this was welcoming change in my home, My hubby and son gave a thumps up to this fried rice...


I searching for prawns recipes and first one thing came to mind is fried rice.. I am a fan of fried rice and i have a few of them in blog too... Since they are so easy to put together and taste is extremely delicious and good...

Here in this recipe i first fry the prawns along with garlic and then added to the fried rice that gives a much flavour to the prawns than the rice... So I hope that you must try this recipe and let me know how it's turns out from you...

INGREDIENTS :

Cooked basmati rice - 1 cup
Butter - 1 tbspn
Onion - 1 (large chopped)
Vegetables - 1 cup (carrot, beans, peas)
Pepper powder - 1 tspn
Sugar - 1 tspn
Salt - 1 tspn
Soya sauce - 1 tbspn
Coriander leaves - few (chopped)

FOR PRAWNS :

Prawns - 15 nos (small size)
Butter - 1 tspn
Pepper powder - 1/4 tspn
Garlic - 5 cloves (chopped)
Salt - a pinch

FOR EGGS PREPARATION :

Eggs - 2 
Salt - 1/4 tspn
Pepper powder - 1/2 tspn
Butter - 1 tspn

METHOD :

  • Cook basmati rice as per this method.. Keep aside. (cool completely)
  • Clean the prawns and devined it and wash well. keep aside.


  • Heat a pan with butter and broken two eggs and add in salt, pepper powder and toss well.
  • Remove it to a plate and keep aside.

  • In the same pan add some butter and add in chopped garlic and fry till the aromatic smell release..
  • Then add in prawns, salt, pepper powder and cook for 2 mins or till the it curled and cooked.
  • Remove it to a plate and keep aside.


  • Now all the ingredients are ready to prepare fried rice..
  • In the same pan add some butter and add in chopped onions, and toss till transparent.
  • Add in all veggies and toss till they are cooked.
  • Once they cooked add in pepper powder, salt, sugar and toss well.
  • When they combined add in fried eggs and cooked prawns..
  • Mix well, add in the cooked basmati rice and mix well.
  • Finished it with soya sauce and mix well.
  • Add in chopped spring onion or coriander leaves..
  • Toss once and serve hot..
  • Enjoy..

PICTORIAL :




Take the prawns and devined it 
Prepare all your ingredients
In a pan heat a spoon of butter
Broken two eggs
Add in salt and pepper
Toss it well
Now it's done
Remove it to a plate
In the same pan add a spoon of butter
Finely chopped garlic
Toss till the aromatic smell comes
Add in prawns
Little bit of salt
Some crushed pepper powder
Toss it for two mins
Remove it to a plate

In the same pan add in chopped onion
Toss till transparent
Add in chopped veggies
Add in pepper powder, sugar and salt
Toss well
When the veggies, almost done
Add in fried eggs
Toss along with the veggies
Add in prepared prawns
Mix well, once it combained
Add in cooked basmati rice
Mix well
Add a spoon of soya sauce
Add in chopped coriander leaves or spring onions
Transfer to the serving bowl
Serve hot
