Rogani Mushroom / Mushroom In Onion Tomato Gravy


Are you a mushroom lover like me ? If you are then you can love my today's recipe... Rogani Mushroom in onion tomato gravy is tasty and delicious curry with chapathi, naan, any mild rice variety... The mushrooms make a tasty alternatives to the meat.. Add onion and tomato puree to the ground spices and salt.. cook stir occasionally untill the masala has completely reduce and the oil droplets into the pan... 


The colour of the gravy attract to have it immediately.. The rich and aromatic rogan mushroom are pure vegetarian which takes place on the very popular Mutton Rogan Josh... The flavour of the spices perfectly blends with the texture and freshness of mushroom....

INGREDIENTS :

Button mushroom - 1 pocket (cut them into slices)
Coconut oil - 5 tbspn
Fennel seeds - 1/2 tspn
Bay leaf - 2 (small)
Onion - 2 small (chopped)
Chilli powder - 1 tbspn
Coriander powder - 3/4 tbspn
Garam masala powder - 1 tbspn
Kasuri methi - 1 tspn
Water - 1/2 cup
Salt - as needed

TO GRIND :

Cashew - 15 to 20 nos (make it a smooth paste)
Tomato puree - 1 cup (cursh five tomato in blender)

METHOD :

  • First soak the cashew in warm water for 15 mins and grind them into smooth paste.. keep aside.
  • Then a blender add chopped five large tomatoes and make it a puree.. keep aside..
  • Heat a pan witj some oil and add sliced mushroom and toss lightly and transfer them to a plate.. keep aside.
  • Heat a kadai add in coconut oil and add fennel seeds and bay leaf..
  • Once it saute add in chopped onions and toss till medium brown colour..
  • Then add in tomato puree and mix well.
  • When it combained well with the onion and then add in chilli powder, coriander powder and garam masala and toss well.
  • Add in salt and Stir it well in low flame till the oil oozes out... 
  • Once the gravy became thick (thokku consistency) add in cashew paste and mix well.
  • When all are combained, add in saute mushroom and mix well.
  • Add little water and mix well..
  • Cover it with lid and cook it in low flame..
  • Then add in kasuri methi and mix well.
  • Cook  and stir occasionally untill the masala has completely reduce and the oil droplets into the pan... 
  • Once it reaches, switch off the flame and serve hot with chapthi..
  • Enjoy...


PICTORIAL :


In a bowl take some cashew
Soak them in a warm water for 15 mins
Add them to a blender 
Make it a smooth paste
In a blender add tomatoes
Make a smooth puree
Slice your mushroom
Heat a pan with oil
Add sliced mushroom
Toss it lightly for few mins
Once it toss
Remove it to a plate
Heat a pan with coconut oil
Add in fennel seeds
Add two small bay leaf
Once it saute add onion
Toss well in the oil
Till golden brown
Add in tomato puree
Mix well and cook along with onion
Once it cooked
Add in all spices powder
Mix well and cook it low flame
Add in salt, mix well
Cook till the gravy became thick
Add in cashew paste
Mix well
Now add in saute mushroom
Add some water
Allow to boil and cook 
Now the masala almost done
Sprinkle some kasuri methi 
Mix and cook till the oil oozes out 
Transfer it to a serving plate (see the colour yummmm)
Serve with hot chapathi
