Badusha / Badhusha - Diwali Sweet Recipe


Badusha is a gem among north indian sweet recipe made with Allpurpose flour / Maida and sugar made on any occasion, special days and festivals like Diwali.. I love love badusha from my childhood days, the sweet stall one, which has a unique taste...I am happy to post my favourite sweet recipe which is soft, flaky, juicy and I love the core...


Making badusha was a dream to me, I get the recipe from the Sharmis Passions, for the first time I tried this in my kitchen.. The result, it comes out well and cannot stop with one at a time (which melts in your mouth)..

INGREDIENTS :

All purpose flour / maida - 1 1/2 cup
Butter - 1/4 cup (room temperature)
Cooking soda - 1 tspn
Curd - 2 tbspn
Sugar - 1 tspn
Oil - 1 1/2 tbspn
Water - as needed

Oil - for frying

FOR SUGAR SYRUP :

Sugar - 1/2 cup
Water - 3/4 cup
Cardamom powder - a pinch
Saffron threads - few

METHOD :

  • In a bowl take soft butter, curd, oil, cooking soda, sugar  and mix well..
  • Now add in maida and mix it well, it look like a crumble mixture..
  • Now add water slowly to form a smooth dough, let it rest for 10 mins..
  • Now make small balls out of the dough and keep aside..
  • Mean while heat a pan with sugar, water, cadamom powder and saffron threads..
  • Switch off the flame when it reches the one string consistency.. keep aside..
  • Now take one ball from the dough and flatten it lightly..
  • Make a dent with your finger and keep aside..
  • Heat a pan with oil cheack by adding a pinch of dough if it rises immediately, correct consistency..
  • Now add in badusha and switch off the stove immediately, let they cooked well in the preheated oil..
  • When the shh sounds leaves, remove it from the oil and drain it in tissure paper..
  • Follow the same steps for frying the remaining badusha..
  • Then dip the hot badusha in a sugar syrup and they immersed well for 2 to 3 mins in syrup..
  • So they coated well, and drain them in a plate..
  • Serve hot and enjoy...


 PICTORIAL :


 Take all your ingredients for dough
 Take soft butter in a pan
 Add in oil, curd, soda and sugar
 Mix it well till they combained
 Now it's done
 In a sifter add maida 
 I siever in the bowl itself
 Make a crumble mixture
 Add in little water
Make it a soft smooth dough 
and rest for 10 to 15 mins
 Now make small balls out of it, keep aside.
 Take the ingredients for sugar syrup
 In a pan add sugar
 Add in water
 Little cardamom powder
  Few crushed saffron threads
 Bring to boil, so it's colour change
 Till reache sthe one string consistency
Now it's done, keep it in warm place
 Take a ball and flatten lightly
 Make a dent with your finger
Now all are done
 Cheack the oil is hot, add in prepared dough
When add badusha, immediately switch off the flame
 It fry in preheated oil, till the shhu sound leaves
 Remove them to a kitchen towels (sorry, forget to take pic)
 Add to the prepared sugar syrup immediately
 Dip well both sides for 2 mins 
 Serve hot

Maida Biscuit / Sweet Diamond Biscuits - Diwali Snacks


Maida Biscuits are easy to make which is loved by all in my family... I love this crunchy and slightly sweet tasty biscuits in south indian mixture recipes, they added this biscuits in that mixture, so I take the mixture box and I just pick it up and roasted peanuts from it and enjoyed... 



This is a tasty snacks which you can make it this diwali... I sure kids surely loved it by enjoying the T.V programs.. Here the prepared dough is cut into diamond shapes and they are fried in hot oil and they coated with powdered sugar make sthe recipe more delicious and yummy...

Makes - 2 cups of biscuits..

INGREDIENTS :

All purpose flour / Maida - 1 cup
Melted Butter - 2 tbspn
Powdered sugar - 3 tbspn +2 tbspn (to sprinkle over the top)
Boiled milk - 3 tbspn (room temperature)
Cooking Soda - 1 pinch
Salt - a pinch
Cardamom powder - 1/4 tspn
Water - as needed
Oil - for frying

METHOD :


  • In a bowl take melted butter, sugar, salt, soda and beat well till it mix..
  • Add in maida, cardamom powde and mix it well, 
  • It will get a crumbly mixture..
  • Add in little water (carefully) to make it a soft, stiff dough..
  • Let it rest for 15 mins..
  • Make a big ball out of the dough and flatten it into circles..
  • Cut them into squares using a knife..
  • Allow the squares to dry for 15 mins..
  • Heat a pan with oil and fry the squares in batches..
  • Should cook in medium flame for even cooking..
  • While frying turn these biscuits twice only..
  • Because it will break the biscuits..
  • Fry thme till dark golden brown in colour..
  • Remove them in a tissue paper..
  • Now transfer them to a bowl and sprinkle some powder sugar and mix well.
  • After cool completely, store them in a air tight container..
  • Enjoy..


PICTORIAL :




Take all your ingredients
In a bowl take melted butter
Add in salt and soda
Now add in powdered sugar
Mix it evenly.
Add in maida
Add in cardamom powder
Add in milk
It will get a crumbly mixture
Now add in little water
To make a soft dough, keep aside for 15 mins
Take a big portions of dough and dust with some flour
Roll them into circles
Make sure like thisthickness
Cut them into squares
Let they rest for 15 mins
Fry them in hot oil
Give it a light mix
You can put all these bisucits together in oil
Cook them in medium flame  
Now it's alomst done
Remove them in a tissur paper
Then take them in bowl
Sprinkle some powdered sugar
 Mix it well
Serve hot
When they cool completely add in airtight container
Enjoy..
