Vegetable Briyani In Pressure Cooker / Veg Briyani


Vegetable Briyani in pressure cooker is quick, easiest and flavourful lunch with simple raita.. It is a one pot meals, perfect dish for any occasions.. One of my favourite briyani, in my childhood day moms make the best briyanis and I have seen her many times cooking Briyani with lot of love and care.. She use only seeraga samba rice which have the taste and flavour of the briyani..



So I prepare this briyani as like my mom.. There are various method of cooking briyani in pressure cooker.. but this is a simplest one with stepwise pictures. Check out my few briyani reicpes in my blog..

INGREDIENTS :

Seeraga samba rice - 3 cups
Ghee - 2 tbspn 
Coconut Oil - 2 tbspn
Cinnamon sticks - 2 (small pieces)
Bay leaf - 2 nos
Cloves - 4 nos
Onion - 2 (sliced)
Tomato - 2 (large, chopped)
Green chilli - 5 (slit)
Ginger garlic paste - 2 tbspn
Chilli powder - 1 tbspn
Coriander powder - 1 tspn
Garam masala powder - 1/2 tspn
Turmeric powder - 1/4 tspn
Curd / Yogurt - 1/2 cup
Carrot - 1 (large, chopped)
Beans - 10 (chopped)
Potato - 1 (chopped)
Salt - as needed
Water - 4 1/2 cups
Coriander leaves - few (chopped)

FOR MASALA :

Coconut - 4 pieces
Cashew - 5 pieces
Shallots / Small onions - 5 nos
Mint leaves - few

METHOD :

  • Wash the rice and soak it for 20 mins, keep aside.
  • Now grind the masala into smooth paste.. keep aside..
  • In a pressure cooker add ghee, oil and whole pieces..
  • Then add in sliced onion and chillies..
  • Toss well till transparent, add in coriander leaves and mint leaves..
  • Stir well, till it became light golden brown..
  • Add in ginger garlic paste and mix well.
  • Now add in masala paste and toss along with onions..
  • Add in spices powder, tomatoes and salt, toss well.
  • Add in veggies and toss well along with the masala..
  • When they mix well, add in curd and mix well.
  • Drain the rice and add to the pressure cooker and mix well.
  • Add in water and mix well.
  • Add in chopped coriander leaves and cheack for salt..
  • Close the lid and pressure cook it for 2 whistle..
  • When the pressure subside, open the lid and fluffy it lightly..
  • Now transfer them to a serving bowl..
  • Enjoy...


PICTORIAL :


Take all your ingredients 
Take the masala items in a plate
Add them to a blender
Mkae it a fine paste
Heat a preesure cooker with oil and ghee
Add in whole spices
Add in onions and green chillies
Toss till transparent
Add in mint leaves and coriander leaves
Toss along with the onions
Toss till they get light golden colour
Add in ginger garlic paste
Give it a mix
Add in masala paste
Mix well in the ghee mixture
Add in all spices powder
Mix it well
Add in tomatoes (sorry few veggies are fell down)
Mix well and toss it for a min
Add in salt
Toss well and cook till the tomatoes mushy
When the oil oozes out, add in veggies
Give it a mix
Add in curd
Give it a quick mix
Drain the soaked rice
Add in to the cooker
Mix well along with the masala
Add in water
Now it's done (mix evenly)
Add in fresh coriander leaves
Mix well (check for the salt)
Clos ethe lid and whistle it for 2 
When the pressure subside, open the lid
Fluff it lightly
Serve them with yummy sidedish
Serve hot
