Cauliflower Peas Kurma - North Indian Style

A simple and delicious kurma that goes along with any type of chapathi / parathas or variety rice.. This kurma is a made with a flavor of onion tomato cashew gravy and by adding Kasuri methi make the dish delicious and flavorful.. But it comes out really good..

Restaurant Gobi Manchurian Dry


Gobi Manchurian dry is my family all time favourite.. I make them quite often at home and they turns out great.. It is a very popular indo chinese starter.. This recipe really works well and and tastes similar to restaurant one... It taste even more crispy even for long time...


Here I cut the cauliflower florets into small pieces... And mix with flour mixture and deep fry it in hot oil till they became crispy... Then fried crispy cauliflower were saute well in all sauces and garnish with spingonions... Taste great with fried rice, noodles, or as starter

Cooking Time : 20 mins

INGREDIENTS :

Cauliflower florets / Gobi pieces - 1 
Water - 1 cup
Turmeric powder - 1/2 tspn
Salt - 1/2 tspn

FOR THE BATTER :

All purpose flour / Maida - 1 tbspn
Rice flour - 3 tbspn
Cornflour - 1 tbspn
Pepper powder - 1 tspn
Salt - 1/2 tspn
Water - as needed

FOR THE SAUCES :

Butter - 2 tbspn 
Garlic cloves - 2 tbspn (chopped)
Onion - 1 (chopped finely)
Capsicum - 4 tbspn (finely chopped)
Soya sauce - 1 tspn
Tomato sauce - 1 tbspn
Chilli sauce - 1 tspn
Vinegar - 1 tspn
Chilli powder - 1 tspn
Corn flour - 1 tbspn
Spring onions - few (chopped)
Salt - as needed

METHOD :

  • Remove the florets from the cauliflower and cut them into small pieces..
  • Heat a pan with some water, salt, turmeric powder and cauliflower for 3 mins..
  • Remove and drain it immediately, keep aside..


  • In a bowl add batter ingredients and mix with little water to make a smooth paste..
  • Now add in cauliflower and mix well.
  • Fry the prepared cauliflower in a hot oil till they crispy...
  • Drain it and keep aside..


  • Now let's prepare sauce for the manchurian..
  • For that in a small bowl add a tbspn of corn flour mix with 1 tbspn of water, keep aside..
  • Heat a pan with butter and add in chopped garlic and saute well.
  • When they saute, add in chopped onion and toss till they transparent..
  • Then add in chopped capsicum and toss for few mins..
  • Now add in chilli powder and little salt..
  • Mix well and add in all the sauces and vinegar..
  • Toss well for 30 secs.. Then add in fried cauliflower and mix well.
  • Now add in cornflour mixture and toss well for 1mins..
  • Then remove them to a serving bowl and garnish with spring onions..
  • Enjoy...

PICTORIAL :

Take cauliflour and seperate the florets
 Heat a pan with water
 Add in salt
 A pinch of turmeric powder
 Add in cauliflower
 Bring to boil for 2 to 3 mins
Drain it, keep aside
In a mixing bowl add in marinate ingredients
 Add some water to make a smooth paste
Add in cauliflower
 Mix it well (batter coated well with the cauliflower)
 Fry them in hot oil till crispy
 Drain it in kitchen towel
Take all your ingredients
 Take some courn flour in a bowl
Mix the cornflour with some water
 Heat a pan with butter
 Add in chopped garlic
 Add in chopped onions
 Toss till they transparent
 Add in capsicum
 Toss till transparent
 Add in chilli powder and little salt
 Add in all the sauces
 Stir well and cook for 30 sec
 Add in fried gobi
 Mix well (noted the gobi is coated with the sauce)
 Add in corn flour mixture
 Give it a mix
 Transfer them to a bowl and garnish with spring onions
Serve hot

Gobi Makhani Recipe / Cauliflower Butter Masala



Gobi Makhani or Cauliflower Butter Masala is a very popular "Makhani or Butter" masala recipe from india... I learn this recipe from Aval Kitchen cook book, the picture attracted me to prepare this masala, it turns out great with my Garlic naan, Veg fried rice recipes.. you can serve with any pulao or roti recipes too...



Yes, friends.. Trust me this gobi butter masala is absolutely finger licking if you serve as a sidedish for any naan recipes, Acually I never thought of making out this much rich looking gravy with cauliflower earlier.. One who loves cauliflower fritters fried along with butter enjoyed thoroughly this gobi butter masala..

INGREDIENTS :

Butter - 3 tbspn
Kashmiri chilli powder - 2 tbspn
Garam masala powder - 2 tspn
Kasuri methi - 2 tspn
Fresh cream - 1/2 cup + 1 tspn for garnish

TO TOSS AND GRIND :

Butter - 2 tbspn
Onion - 2 (chopped)
Tomato - 3 (chopped)
Cashew - 10 nos
Salt - 1 tspn

TO FRY CAULIFLOWER :

Cauliflower florets - 350 grams
Rice flour - 2 tbspn
Corn flour - 2 tbspn
Pepper powder - 1 tspn
Salt - 1/2 tspn
Water - 2 tbspn
Butter - 2 tbspn

METHOD :

  • First make the masala, heat a pan with butter add in cahew, onion and tomato and toss well.
  • Add little salt and toss well till they mushy..
  • Transfer them to a plate to cool completely..
  • Remove them to a blender and make it a smooth paste..Keep aside.
  • Second fry the cauliflower for that, take cauliflower in a bowl and wash it with warm water.
  • Add in riceflour, corn flour, pepper, salt and sprinkle little water and mix well..
  • Heat a pan with some butter add in prepared cauliflower and toss well in the butter.
  • Till they get golden brown in colour.. remove them to a bowl, Keep aside..
  • Let start to make masala for that, heat some butter in the same pan add in onion tomato paste.
  • When they started to bubble, add in add in fried cauliflower and mix well.
  • Cook it for 5 mins, and sprinkle some kasuri methi and pour over some fresh cream.
  • Cover it with lid and cook it for 15 mins..
  • Now the fray is ready and became thick and creamy...
  • Transfer them to a serving bowl..
  • Sprinkle some kasuri methi and spoon some fresh cream over the heavy to garnish..
  • Now serve hot and enjoy...

PICTORIAL :

Take ingredients for frying 
Add butter to a kadai
Add in cashew
Add in onion
Toss till transparent
Add in chopped tomatoes
Toss well along with onions
Add in some salt
Toss well till they mushy
Now it's done
Transfer them to a plate
Remove it to a blender
Make it a smooth paste
Now take the ingredients to fry the cauliflower
Take the cauliflower in a bowl and wash in warm water
Add in flours, pepper and salt
Add in some water
Mix it well
Spoon some butter in your pan
When it melts add in cauliflower
One by one
Toss well in the butter
Till they get light brown in colour
Now it's done
Transfer them to a bowl
Take some butter in the same pan
Add in grinded masala
Allow to boil
Add in chilli powder and garam masala powder
Mix it well
Allow to boil it
Add in fried cauliflower
Toss it well, allow to boil for 5 mins
Add in kasuri methi
Add some fresh cream
Cover it with a lid and cook for 10 min in low flame
Now it's done
Transfer them to a bowl
Pour some fresh cream over the gravy
Serve hot
