Amma's Tomato Chutney


Tomato chutney is my Amma's famous recipe.. It is spicy tangy made from tomatoes.. Chutneys are common made in every indian home. Amma make many varities of chutney but my dad and my sister like this tomato chutney.. They often told my mom to make this chutney for idlies...



It is such a verity inspired from south indian cuisine.. Apart from the tangy taste of tomatoes, there is a special distinct warm aromatic flavour of sambar powder which gives superb taste to the chutney... I hope that you must try this delicious chutney with boiled hot idlies and let me know how it's comes out from you....

INGREDIENTS :

Tomatoes - 5 nos or 350 grams
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Sambar powder - 2 tspn
Coconut - 1 big piece
Onion - 2 (finely chopped)
Dry red chilli - 3 nos
Salt - as needed
Oil - 2 tbspn

METHOD :

  • Take fresh tomatoes and wash them well.. Make slashes on it and keep aside..
  • Now in a sauce pan add water bring to boil add in slashed tomatoes..
  • Let them cook for 10 mins or till the tomato skin are remove from the pulp..
  • Remove the tomatoes to a plate and let them cool..
  • Keep the boiled tomato water aside..
  • When the tomatoes are cool remove the skin and smash it lightly..
  • Now in a blender add boiled tomatoes and a piece of coconut and make it a paste..
  • Heat a pan with oil add in mustard seeds, urad dal allow to crackle..
  • Then add in dry chilli, chopped onions and toss well for few sec.
  • Now add in tomato coconut puree and sambar powder, mix well..
  • Add in boiled tomato water which we have already kept..
  • Give it a mix and add in salt.. 
  • Boil it for 7 to 8 mins in low flame.. 
  • Now it done, serve hot with idlies...
  • Enjoy..


PICTORIAL :


Take fresh tomatoes and wash well
Take your ingredients
Make slashes in the back of every tomatoes
Heat water in a sauce pan
Once heated add in tomatoes
Let them cook for 10 mins
When the tomatoes is cooked or
 the skin removed off the stove
Remove it to a plate and let them cool
Press it lightly
Keep aside the boiled tomato water
In a blender add coconut 
Pulse it one time
Add in boiled tomatoes
Make it a smooth paste
Heat a pan with oil
Add in mustard seeds
Some urad dal and allow to crackle
Add in chilli
Finely chopped onions
Toss well
Till transparent
Add in tomato paste
Some sambar powder
Toss well along with the onions
Now add in tomato water
Give it a mix
Add in salt
Give it a mix
Keep in low flame for 8 mins
Now give it a mix 
Now it's ready and transfer it into a serving bowl
Serve hot

Onion Tomato Chutney


Onion Tomato chutney is one the quickest and easiest chutney recipes.. I make it often... I have already post a version of Onion tomato kara chutney recipe with small onions but this is ammas version, she usually makes this for travel as a sidedish for idli or uttapams..  


I can say this is one of the versatile chutneys as it goes well for most breakfast dishes... It's taste is really yummy.. I like to have with Rava dosai.. I prefer to use is gingelly oil because of its aroma and taste.. I dont make the same chutney twice.. and i like to experiment with the chutney.. Sure you must give it a try and let know how its turns out for you...

Cooking time : 15 mins

INGREDIENTS :

Gingelly oil - 2 tbsp
Dry chilli - 6 nos
Garlic - 7 nos
Tomatoes - 3 large
Onions - 1 (big size sliced)
Salt - as needed

FOR TEMPERING :

Gingelly oil - 2 spn
Mustard - 1/2 tsp
Urad dal - 1/2 tspn
Small onions - 2 (finely chopped)
Red chilli - 2 (broken)
Curry leaves as needed

METHOD :

  • Heat oil in a pan. Fry dry chilli, garlic till golden, remove to a plate. 
  • In the same oil add sliced onion, chopped tomatoes and cook till it turn completely mushy.
  • Now take garlic, chilli, tomatoes, onion, salt in a blender and make into a smooth paste. Add water if needed. and keep aside.
  • Now make tempering by heat oil in a kadai.
  • Add mustard, urad dal allow to crackle
  • Add in chopped onions, curry leaves and fry it for 2 sec.
  • Pour grinded masala to that, and toss it for a min.
  • Now onion tomato chutney.
  • Serve this with idli or dosa....

PICTORIAL :


In a kadai add in garlic and chilli
Along with a spoon of oil 
Toss well till light brown
Remove it to a plate
Now cut the onion and tomatoes
Toss it in the same kadai
Mix well
Till it became mushy
In a blender add in garlic and chilli
Along with that onion tomato mixture
Spoon of salt
Make it to a paste
In a kadai add in mustard, urad dal allow to crackle
Add in broken chilli
Chopped onions and curry leaves
Now add in grinded paste
Cook it for 5 to 7 mins
Now it's done
Serve it with dosa
