Kerala Malabar Paratha / Kerala Parotta


Kerala Malabar Paratha is a flaky flat bread layered that is famous across the whole south india... Malabar paratha are street food originating from the malabar region along the coast.. Paratha is usually called as parotta over here.. Here in tirunelveli there are so many parotta shop they usually serve parotta with a lovely salna.. 



In making of parottas, there are so many method in doing that... they will just throw the one small portion of dough in air to make it thin with their hands and roll it into parottas.. But that is doesn't work for me.. So i make this so simple and parotta turns out very flaky and soft.. So every one can try this simple method...



The essential components for this parathas is all purpose flour (maida), sugar, salt, oil and important thing is milk.. which gives soft texture to the parathas.. The sidedish which is suitable for this parathas are...

Preparation time : 30 mins
Resting time : 4 hours +1 hours
Cooking time : 45 sec to 1 mins for 1 paratha..
Serve - 5

INGREDIENTS :

FOR DOUGH :

All purpose flour / Maida - 1/2 kg / 500 grams
Warm milk - 300 ml
Oil - 2 tbspn + more for frying
Sugar - 1 tbspn
Salt to taste

FOR MAKING PASTE :

Oil - 1/2 cup
All purpose flour / maida - 1/2 cup

METHOD :

  • Mix everything in a wide mixing bowl and form a dough, cover it with a damp cloth and let it rest for about 4 hours..
  • In a bowl add 1/2 cup of maida and pour in some oil and make it into a smooth paste and set aside..
  • After 4 hours add some more flour to the dough and kneed with your hands to form soft dough..
  • Divide the dough into equal portions..
  • Take dough ball and spread it into a thin layered chapathi..
  • Add in a tbspn of maida oil over it..
  • Spread it evenly, noe with a sharp knife cut it into strips..
  • Put all the strips together and curl it into round..
  • Apply some oil on the dough ball and set on a plate..
  • Make every dough like the same way..
  • After that cover that with damp cloth and set aside for 1 hour..
  • After 1 hour take the dough and make it to a slightly thicker parata..
  • Heat a tawa on high heat and place the parata over the pan and cook the parata on both sides by appling oil till it is golden brown..
  • Remove it to a cutting board then stack them together and crush them with your hands vigorously till the flakes seperates..
  • Put them in a hot case and repeat the same process for all the dough..
  • Serve them hot with your favorite curry..
  • Enjoy..


PICTORIAL :



Take all your ingredients
Heat some milk in a sauce pan
Add some sugar 
Let it be warm, keep aside
Add flour in a wide bowl
Add in salt
Mix well
Make well in the center of the dough
Add in oil
Then add in warm milk
Mix well
Again pour rest of the milk
Mix well
 It sould be soft
Now it is sticky..
Apply some oil over it
Cover it with damp cloth and let it rise..
After 4 hours it rises
Knock out the air 
It is sticky
Add some flour to the dough
Kneed well with your hands
Now it's done
In a bowl add some flour
Some oil
Mkae it to a paste
Like this
Sprinkle some flour 
Place the dough
Divide it into equal portions
Now it's done
Take a one portion dough
Spread it into thin layered
Spread the flour oil in this
Spread it evenly
Cut into long thin strips
Take it together
Like this
Start rolling
Roll..
Roll..
Perfectly rolled
All done
Sprinkle some oil on the top
Let it rest for 1 hour
Take one roll
Spread it into thick roti
Put it on the heat tawa
Flip over
Again flip it
Press it with ladle (so it's puffs up)
Cook on both sides
Apply oil
Now it's done
Take it to a cutting board
Start crushing
Crush
Crush
All are done
Wow.... flacky layers
Now it's done
Remove it to plate
Serve with chicken salna
Serve hot
