Today I prepared this vegetable Briyani with soya chunks and really it taste great.. Soya chunks are rich in protein and it's taste like mutton.. If you are vegetarian you should try this delicious and awesome chunks Briyani with lot of vegetables...
I made this briyani in pressure cooker, so it is great to added soya chunks with all vegetables instead of plain briyani, it comes out well... Soak the soya chunks in warm water till they soften and squeeze the excess water and wash in cold water, repeat this twice and just add to the briyani and whistle it..
I serve this delicious briyani with Simple Potato Fry and Onion Raita.. It's a perfect lunch for my kids, they really enjoyed well. So I hope that you must try this recipe and let me know how it's turns out from you...

INGREDIENTS :
Ghee - 2 tbspn
Coconut oil - 2 tbspn
Bay leaf - 2 small
Cloves - 2 nos
Cinnamon sticks - 2 nos
Basmati Rice - 1 1/2 cup (I use India Gate - Classic)
Onion - 2 (sliced)
Green chilli - 5 to 7 nos (slit)
Toamto - 1 (big chopped)
Vegetables - 1 cup (carrot, beans, Potato)
Peas - 1/4 cup
Soya chunks - 1 cup (soak in warm water)
Chilli powder - 1 tbspn
Coriander powder - 1/2 tbspn
Cumin powder - 1/4 tspn
Turmeric powder - 1/4 tspn
Garam masala powder - 1/2 tbspn
Curd - 1/2 cup
Water - 3 cups
Salt - as needed
Coriander leaves - few (chopped)
Mint leaves - few (chopped)
FOR MASALA :
Corinader leaves - a bunch
Mint leaves - a bunch
Ginger - 3 pieces (1 inch)
Garlic - 6 nos
Shallots / Small onions - 4 nos
METHOD :
- Soak the basmati rice in water for 30 mins, keep aside..
- Soak the soya chunks in warm water for 1 hour, drain the water, sueeze the excess water and wash it in cold water, repeat it twice..
- In a blender add masala ingredients and make it a smooth paste, keep aside..
- Prepare all your ingredients ready and let's started to make briyani..
- Heat a pan with ghee and oil.
- Once it smoke add in whole spices and toss lightly..
- Add in onion and green chilli toss till transparent..
- Then add in chopped coriander and mint leaves and toss well.
- Once the onion became light brown add in tomatoes..
- Add in salt, spices powder and mix well.
- Allow to cook it for 5 mins or till the tomatoes became mushy..
- Once it done add in veggies, soya chunks, peas and give it a mix..
- When they are combined add in masala paste and curd..
- Mix it evenly and cook it for 5 ins..
- Then ad in water and chopped coriander and mint leaves..
- Mix well, add in rice and allow to boil..
- Cover the lid and cook it for 3 whistle, sure the pressure goes by itself..
- Now open the lid and fluffy it lightly..
- Sprinkle some coriander leaves..
- Serve hot with raita..
- Enjoy..
PICTORIAL :
Take all your ingredients
Soak rice and soya, keep aside
I just soak thie in warm water for 1 hour
Squeeze excess water from the soya
Wash well in cold water and keep aside
Take your masala ingredients in a plate
Make it a smooth paste, keep aside
Heat a pan with ghee and oil
Add your whole spices
Once toss and add in onion & chillies
Toss till transparent
Now add in coriander and mint leaves
Toss it till light golden
Once it done
Add in chopped tomatoes
Mix it well
Add in salt
All the spices powder
Mix well along with the tomatoes
Allow to cook the tomatoes to became soft
Now it's alomst done
Add your veggies
Add in soya chunks
And your peas
Toss well, one it mix
Add in prepared masala paste
Add in curd
Mix it evenly, and cook it for 5 mins
Add in water
Add some coriander and mint leaves
Bring to boil
Strain the soaked rice
Add the rice
Give it a mix, bring to boil
Whistle it for 3 and pressure go by itself
Now the briyani is ready
Fluff it lightly
Now it's done
Sprinkle some corinader leaves
Transfer them to a serving bowl
Serve with raita
