Coconut Fudge Cake / Coconut Sugar Pudding


I wants to try this cake for so long, because my hubby is a favourite of coconut, what ever in cookies, cake, muffins,a cupcakes or any other sweets.. This cake is drenched in a sugar syrup which was mouth watering.. you could add any nuts as you wish as a topping..

Baking time : 30 - 40 mins
Makes - 6 to 8 pieces

INGREDIENTS :

All purpose flour / Maida - 1 1/2 cup
Eggs - 2
Powdered suagr - 1/2 cup
Dessicated coconut - 1/3 cup
Almonds - 4 tbspn (sliced)
Butter - 3/4 cup
Vanilla essence - 1 tspn
Baking powder - 1 tspn

FOR SYRUP :

Sugar - 2 tbspn
Vanilla - 1 tspn
Water - 30 ml

METHOD :

  • Preheat the oven to 180 Degree C.
  • Butter the tin generously and dust it with flour on all sides.. Set aside..
  • In a mixing bowl, beat together eggs, sugar, vanilla till light and fluffy..
  • Add butter, dessicated coconut and mix well..
  • Pour this in the prepared tin, throw some almonds and coconut in the top and bake for 30 - 40 mins...
  • After that take the tin out of the oven and let it cool..
  • Mix sugar, vanilla, water in a sauce pan..
  • Heat it till combained and dizzle this over the top of the cake...
  • Let this cool completely... slice and serve..


PICTORIAL :


Take all your ingredients
Crack open eggs in a mixing bowl
Add in sugar
Beat well till fluffy
Now almost done
 Add in butter
Add in some dessicated coconut
Add in vanilla essence
Fold gently
Take flour and baking powder 
Stif it in the batter
Fold gently
Prepare your tin
Spread it evenly
Sprinkle some nuts on the top
Sprinkle some coconut
Bake it for 30 to 40 mins
Transfer it to a plate
Take sugar, vanilla, water in a sauce pan
Boil till it combained
Now it's done
Pour over the cake
Done
Slice and serve
