Subz Cashew Pulao / Fragrant Vegetable Cashew Pulao


Subz Pulao is a fragrant vegetable pulao with lot of cashews... A delicious and tasty meals with all essential nutrients is always welcome.. Today I make this tasty pulao for lunch that enhance all nutrients to my family.. It was so yum.. yum... yummy and served with gopi 65 and onion raita.. 


Once I browsing and searching for mild rice recipe, I saw this cashew pilao with jeera is named Jeera cashew pulao, but I wants to make it healthy so I added veggies... The colour of the rice attracted me to make it quick.. Here the rice is roasting in ghee for 2 to 3 mins along with the veggies make the rice flavourful and aromatic.. My son loved it to the core..

INGREDIENTS :

Ghee - 3 to 4 tbspn
Cashew - 15 to 2 0 nos
Basmati rice - 1 1/2 cups (I use India gate Classic)
Bay leaf - 2
Fennel seeds - 1 /2 tspn
Cumin Seeds / Jeera - 1/2 tspn 
Cinnamon sticks / Pattai - 2 small
Cloves / kirambu - 2 nos
Onion - 1 large (chopped roughly)
Tomato - 1 (Chopped roughly)
Green chilli - 5 to 6 (slit)
Vegetables - 1 bowl (carrot, beans, potato)
Milk - 3 cups
Salt - as needed 
Coriander leaves - few (chopped)
Mint leaves - few (chopped)

METHOD :

  • Heat ghee in a pressure cooker and add whole spices and cashew..
  • Saute well till the cashew turns light golden..
  • Add in onion, green chillies toss till transparent..
  • Add in ginger garlci paste, salt and saute for a min..
  • Once it combained add in chopped tomatoes and mix along with the onions..
  • Add in veggies and mix well for 2 to 3 mins..
  • Add in drained rice and toss along with veggies mixture.
  • So the rice became flavourful, it takes 3 to 4 mins..
  • Pour the milk and give it a mix..
  • Add in chopped coriander and mint leaves and give it a mix..
  • Close the lid and pressure cook it for 3 whistle..
  • Sure the cooker the pressure go all by itself..
  • Now open the cooker and fluff it lightly..
  • Transfer them to a serving plate and serve hot..
  • Enjoy..


PICTORIAL :


 Take all your ingredients 
 Heat a preesure cooker with ghee
 Add your spices
 Add in cashews
 Toss it lightly in the ghee
 Add in green chilli and onions
 Toss till it became transparent
 Add in ginger garlic paste 
I forget to mentioned in the ingredients picture
Add in salt
 Toss well, so that they combained
 Add in tomatoes
 Toss along with the onions
 Now wash well your veggies
 Add them to the pressure cooker
 Stir well with the onion tomato mixture
 It will take 2 to 3 mins
 Now add in drained rice
 Sure no water content is there
 Stirring along with the veggies, so the rice is more flavourful..
 Add in milk
 Give it a mix
 Add in chopped coriander and mint leaves
 Give a total mix
 Close the lid and pressure cook it for 2 to 3 whistle
 The pressure of the cooker go all by itself and open the cooker
 Fluff the rice carefully
 Give it a complete mix 
 Transfer them to a plate
 Serve hot with raita
