Vendakkai Sambar / Lady's Finger Sambar


I love vendakkai sambar aunty makes, it took me several days to get the similar taste... Vendakkai sambar is so flavour ful that it tastes good on steamed hot white rice...My aunty makes it perfedctly ans she even says it is perfect for beginners in cooking as it comes out easily....It is a traditional simple south indian sambar recipe... 


We don't need any special sambar powder to prepare this yummy sambar i make my own traditional sambr masala for this sambar... It is my village staple dish, they make the sambar with any vegetables... Aunty always insist that the each veggie that we add to sambar gives a unique flavour to the sambar... I have already posted other sambar recipes.....

INGREDIENTS :



Boiled toor dal - 1 cup
Tamarind - a small lemon size
Turmeric - 1 pinch
Grated coconut - 1/2 cup
Salt as needed
Coconut oil - 2 tsp

VEGETABLES :


Tomato - 2 
Green chillies - 8 
Shallots - 5 
Vendakkai / Lady's finger - 100 grams

FOR GRINDING : 

Dry red chilli - 8
Cumin seeds - 1/2 spn 
Garlic - 1 (big clove)

Shallots - 8

FOR TEMPERING :

Mustard - 1 tsp
Urad dal - 1 tsp
Shallots / Small onions - 3  (chopped)
Curry leaves - few

METHOD :
  • Grind the onion/ shallots into fine paste, 
  • And then in a blender add chilli, cumin, garlic and grind into fine paste.
  • Soak tamarind in 1/4 cup of water and extract pulp.
  • Wash well the lady's finger and drain it in to a kitchen towel for 5 mins and then cut it into pieces..
  • Heat coconut oil and add in chopped tomatoes, sliced green chillies, shallots and Lady's finger....
  • Add in onion / shallots paste and water, allow to cook for 5 mins..
  • When it bring to boil add in turmeric powder and mix well. 
  • Close the lid and allow to cook for 10 mins..
  • In a bowl add in grinded masala, salt, boiled dal, tamarind extract and mix well. 
  • Pour it into the sambar allow to boil for 5 min till raw smell is gone..
  • Now add in grated coconut and mix well.
  • Then made tempering by heating coconut oil and crackling mustard seeds, urad dal, chopped onions and curry leaves.
  • Pour this over the sambar and mix well.
  • Leave the pan covered till serving. 
  • Serve with hot plain white rice...

PICTORIAL :


Take your veggies
Cut them first
Take the masala ingredients

Add to the blender
Grind it into paste
Heat a pan with oil
Add in lady's finger
Add in tomatoes, shallots, chillies and mix well
Now add some shallots to the blender
Graind into coarse form
Pour some water
Add to the veggies
When it boil add in turmeric powder
Give a mix
Allow to cook for 5 mins
Boil some toor dal and mash them
Add in some masala
Some salt
Tamarind juice
Mix well
When it cook for 5 mins
Pour the toordal mix to the sambar
Mix well
See how they are cooked
Bring to boil for 7 to 8 mins
Some fresh coconut
In another pan add in oil, mustard, urad dal
Add in chopped shallots
Toss well
Add in curry leaves
Pour it to the sambar and off the stove
Now it's ready
Serve hot
