Mixed Vegetable Traditional Sambar


Mixed vegetable sambar is delicious indian recipe served as a curries for plain white rice... An easy and quick method to make sambar using some vegetables like brinjal, radish, drumstick, raw mango, tomatoes etc..It is quite popular among indians and for those who wonder what it is? 
  

Sambar is most favourful dish which plays a important role in indian menu especially for south indians, my Amma prepared this recipe in my home and it is very aromatic because of the freshly masala, coconut and my sister really enjoy this recipe with rice..

Preparation time : 20 mins

Cooking time : 1/2 hour
Serve - 4 to 5
Cusine - Indian

INGREDIENTS :



Boiled toor dal - 1 cup
Tamarind - a small lemon size
Turmeric - 1 pinch
Coriander leaves - few
Grated coconut - 1/2 cup
Salt as needed
Coconut oil - 2 tsp

VEGETABLES :

Brinjal - 4
Radish - 2
Drumstricks - 1
Tomato - 2 
green chillies - 5 
Raw mango - 5 to 6 pieces

FOR GRINDING : 

Dry red chilli - 8
Cumin seeds - 1/2 spn 
Garlic - 1 (big clove)
Shallots - 8

FOR TEMPERING :

Mustard - 1 tsp
Urad dal - 1 tsp
Shallots / small onions - 3  (chopped)
Curry leaves - few

METHOD :
  • Grind the onion/ shallots into fine paste, and then in a blender add chilli, cumin, garlic and grind into fine paste.
  • Soak tamarind in 1/4 cup of water and extract pulp.
  • Wash well all the veggies and cut it into pieces..
  • Heat coconut oil and add in chopped tomatoes and sliced green chillies..
  • Add in onion / shallots paste, water and all veggies, allow to cook for 5 mins..
  • When it bring to boil add in turmeric powder and mix well. 
  • Close the lid and allow to cook for 10 mins..
  • In a bowl add in grinded masala, salt, boiled dal, tamarind extract and mix well. 
  • Pour it into the boiled vegetables allow to boil for 5 min till raw smell is gone..
  • Now add in grated coconut and chopped coriander leaves and mix well.
  • Then made tempering by heating coconut oil and crackling mustard seeds, urad dal, chopped onions and curry leaves.
  • Pour this over the sambar and mix well.
  • Leave the pan covered till serving. 
  • Serve with hot plain white rice...
PICTORIAL :

Cut all veggies
Add shallots to blender
Grind it
Add in coconut oil
Add in tomatoes and chillies
Add in grind onion
Add in some water
All vegetables
Some turmeric powder
Mix well
Covered it with lid
Allow to cook for 5 mins
Grind the masala to a smooth paste
Add masala to the bowl
Salt
Boiled dal
Then add in tamarind extract
Mix well
Pour it
Mix well
Allow to cook for 10 mins
Add in grated coconut 
Now chopped coriander
Heat oil in pan and add in mustard, urad dal
Then add in onion and curry leaves 
Then pour it into the sambar
Mix well
Now its ready
Enjoy..
