Boondi Ladoo / Boondi Laddu



Hi  friends this is the festival season of diwali, I have been prepared sweets and savory recipes in my blog.. So today i made Boondi ladoo recipe, it is derived from the word 'Boond'  in hindi which means water droplets... It is sweety, soft, yummy, delicious and delightful to have in the festival occasions....




There are two types of boondi ladoos. One is a soft texture and another is a crisp texture.. Both these ladoo are have same variations in the method and the consistency of sugar syrup, Thus yielding different textures... This recipe give a soft textured Boondi ladoos....



Iam proud and contented when boondi holded together as ladoo as that was the major part so i was worried about... I got the recipes from my friend Aarthi who is also a expect cooking blogger and has it's own website.. For the first time totally satisfied with the results...Thanks Aarthi to share this recipe.. Iam really happy, now I learn how to make boondi ladoo...

INGREDIENTS :

Gram flour / Kadalai mavu / Besan - 1 cup
Yellow food colour - a pinch (I use liquid)
Baking soda - 1/4 tspn
Water - 1/2 + adjust accordically
Oil - for deep frying

FOR SUGAR SYRUP :

Sugar - 1 1/2 cup
Water - 1/2 cup
Yellow food colour - 1 drop
Cloves - 1 (powdered)
Cardomom powder - 1 tspn

TO TEMPER :

Ghee - 1 tspn
Cashew - 10 (broken)
Raisans / kishmish - 8 nos



Kalkandu / Sugar candy - 1 tspn (optional)

METHOD :


  • Take gram flour in a sifter and sieve it, Add in water and mix to a smooth batter.
  • Add in some baking soda and food colouring, mix well.
  • The batter should be little thick, it should be thinner than bajji batter..
  • Now heat a oil for deep frying.
  • Take a boondi karandi or a perforated ladle..
  • Hold it over oil. pour a ladle full of batter over the ladle and spread it out.. The boondi will fall drop by drop.
  • Fry till they are soft. drain them and set aside..


SUGAR SYRUP :



  • Take sugar and water in a pan, mix well. Bring it to boil and cook till it reaches a single string stage.
  • When you take out spoon from the syrup and see the last drop falling from the syrup is to be single string consistency..
  • At the time switch off the flame, add in cardamom powder, Cloves powder, food colour, and mix well.set aside..


TO TEMPER :



  • Heat a pan with ghee add in cashew, raisans and fry till golden, keep aside..


TO MAKE LADOOS :



  • Now all the items are ready to make Boondi ladoos..
  • Now take fried boondi in a wide large bowl add in sugar syrup and use the back of a big ladle to bash the boondis so it get mashed up..
  • Now pour the sugar syrup over the ladoo and mix well.
  • Taje a small portion of this mix and shape it into a tight ladoo.
  • Do this for all the mixture. Let this set for 2 to 3 hours till it gets frim.
  • Then serve... Enjoy...


PICTORIAL :



Take your ingredeints
Sifter the gram flour

 Now it is sieved
 Mix lightly
Add water slowly and make it into smooth batter
Just like this
Add in some baking soda
Some drops food colour
Mix well
The consistency should be like this
Heat a pan with oil
Take normal Perforted spoon
Place the ladle over the oil
Spoon some batter and spread it using a spoon
Fry them 
Drain them in a kitchen towel
In a sauce pan add in sugar
Some water
Let it to boil
Till it reach 1 string consistency
Remove it from the flame and add in cloves powder
Cardamom powder
Few colour and set aside
Heat a pan with ghee
Add in cashew and raisans 
Fry till golden
Now take fried boondis in a bowl
Pour the syrup over the boondi
Mix well
Pour another half of the syrup
Now use tha back of the ladleto bash and mash the boondis
Now it is mashed little..
Pour this over the boondi mix
Mix well
Now take a portion of mix in your han
Roll it to form a tight ball
Ladoos done...
