Eggless Tutti Frutti Muffins


This is one muffins which I wanted to bake for a long time, finally i made it.. This is the eggless muffins here  the curd is used as a egg replacer and its worked as a charm... Tutti frutti is a colourful confectionary containing various fruit flavours and usually chopped candied fruits which simulating a combained flavour of different fruits.. so i loved it...


Past two weeks i was in muffins mood, I was quite a bit of muffins recipes in my blog.. I have made few more recipe coming up.. so stay tuned....

Preparation Time : 5 mins
Baking - 15 to 20 mins
Makes - 10 to 12 muffins

INGREDINETS :

All purposr flour / Maida - 1 1/2 cup 
Sugar - 3/4 cup
Cooking oil / Butter - 1/2 cup
Plain yogurt / Thick yogurt - 1 cup
Baking soda / Cooking soda - 1/2 tspn
Baking powder - 1 tspn
Vanilla essence - 1 tspn
Tutti frutti - 1/2 cup (you can use chopped nuts or chocolate chips)
Salt - a pinch
Milk - 1/2 oras needed to thin the batter
All purpose flour / Maida - for tossing tutti frutti

METHOD :

  • Preheat the oven to 180 Degree C.. 
  • Line the muffins tray with cupcakes wrappers, keep aside..
  • Take maida, salt in a sifter and sieve well, keep aside..
  • Take Tutti frutti in a bowl and add a spoon of flour and mix well, keep aside..
  • In a bowl add sugar, oil, vanilla and mix well, keep aside.
  • In a mixing bowl take thick yogurt, baking soda, baking powder and mix, now it will get foamy..
  • Add sugar mix in and mix well, add flour mix and little milk to make the batter thin..
  • Finally fold it in the tutti frutti and mix well..
  • Using icecream scooper scoop the batter into a lined muffin tray..
  • Bake it for 15 to 20 mins, Insert the toothpick and check wheather it's done or not..
  • Remove it from the oven and cool completely..
  • Serve warm...


PICTORIAL :


 Take all your ingredients 
 Take flour in a sifter
 Then a pinch of salt
 Sieve well, keep aside
 Take some tutti frutti in a bowl
 Spoon some flour
 Mix well and keep aside
 Take sugar in a bowl 
 Add in oil
Add vanilla, mix well and keep aside
 Take thick yogurt in a mixing bowl
 Add in baking soda and baking powder
 Mix well
 See how foamy it becames that gives the muffins light texture
 Add in sugar mix
 Mix well
 Add in flour mix
 Combained well
 Add little milk to thin the batter
 Now it's done
 Now add in tutti frutti mix 
Fold gently
 Line the tray with cupcake wrappers
 Now scoop the batter using icecream scooper
 If needed sprinkle some tutti frutti
Bake them
 Serve warm
