Sambar Vadai is a popular dish originally a south indian dish but famous all over the world.. The puffed soft Medhuvada / ulundhu vadai is dipped in hot sambar and it is a makes a nice indian fragrance has it's traditional flavour, has no alternatives...
When we went to chennai, one famous shop named Murugan Idli Shop in T.Nagar, I order sambar vadai recipe and enjoy with their chutneys.. Their making of sambars are best and love the sambar vadai a lot... So I wants to try this sambar recipe like them, so I browse more website to get a correct hotel sambar recipe.. The result was so suprise to me, it turns out really good and amazing to my family...

INGREDIENTS :
Methu vada / Ulundhu vadai - 10 nos
Warm water - 1 cup
Onion - 2 (chopped finely) for garnish
FOR HOTEL SAMBAR :
Moong dal / Siru Paruppu - 1 cup
Turmeric powder - 1 tspn
Shallots / Small onion - 9 to 10 nos
Green chilli - 3 (slit)
Tomato - 2 (chopped)
Curry leaves - few
Chilli powder - 1 tspn
Tamarind - 1/2 cup (gooseberry size)
Asafoetida / Hing - 1/2 tspn
Salt - as needed
Ghee / Clarified butter - 1 tbspn
TO TEMPER :
Coconut oil - 2 tspn
Mustard seed - 1 tspn
Urad dal - 1 tspn
Sambar Powder - 2 tbspn (I use MTR)
METHOD :
- Prepare your Medhu vadai and keep aside..
- Now let's prepare your sambar recipe..
- For that, add moong dal in a pressure cooker, water, turmeric powder and close the lid..
- Pressure cook it for 3 whistle, When the pressure subsides..
- Soaked the tamarind in water for 1/2 hour and extract the juice..keep aside.
- Add in shallots, tomato, chilli and curry leaves..
- Then add in tamarind water and chilli powder and mix well.
- Allow to boil, meanwhile in another stove, heat a pan with oil.
- Add in mustard seeds and urad dal, allow to crackle..
- Now add in sambar powder and give it a quick stir..
- And add in some water and pour the boiled sambar..
- Give it a mix and then add in salt, asafoetida, and allow to boil for 5 mins..
- Atlast garnish with chopped coriander leaves and top with ghee.
- Switch off the flame, the hotel sambar is ready..
- Soak the vada in hot water and let it soaked for 2 mins.
- Now gently squeeze out the excess water..
- Without changes it's shapes, and place them in serving bowl..
- Add hot sambar over it and sprinkle some chopped onions before serve..
- Serve hot... Enjoy...
PICTORIAL :
Take all your ingredients
In a cooker, take moong dal
Add some water
Add some turmeric powder
Cover and whistle it for 2 to 3
Now open the cooker
Add in shallots, tomato, chilli and curry leaves
Add in tamarind water
Add in some chilli powder
Mix it well
In another stove add in coconut oil
Add in mustrad seeds and urad dal
When the crackle add in sambar powder
Now give it a quick mix
Now it's done (no to burn)
Add some water
Pour over the sambar
Add in salt
Allow to boil for 10 to 12 mins
Add in asafoetida
Give it a mix
Now it's done, switch off the flame
Add a tbspn of ghee
Transfer them to a bowl and garnish with coriander leaves
Prepare some methu vadas
Take vadas in a bowl add in warm water
Dip them for 1 min and squeeze the excess water
Take your serving plate
Place the vadas
Pour over the hot sambar
Vadas will 3/4 dip in sambar
Sprinkle some finely chopped onions
Now serve immediately
Yummy and delicious
