Coconut Sevai / Thengai Sevai


Coconut Sevai / Thengai Sevai is a simple and I love this simplicity of today's South indian style breakfast or tiffin items.. It is used with left over idiyappam or freshly idiyappam.. Idiyappam is nothing but rice noodles / String hoppers / Sevai where prepared rice flour dough is hand pressing using a idiyappam maker and steamed...


This is very easy and packed with flavours..  And there are many variety of sevai they are lemon sevai, Masala idiyappam, Idiyappam kothu, Paruppu sevai and many more.. I will try all this types in my blog, so keep watching..

INGREDIENTS :

Plain Sevai / String Hoppers - 10 nos 
Fresh coconut - 1 cup (grated)
Coconut oil - 1 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Cumin seeds - 1 tspn
Dry chilli - 2 (broken)
Ghee - 1 tspn
Cashew - 10 nos
Channa dal / Kadalai paruppu - 1 tbspn
Curry leaves - few
Hing / Asafoetida - a pinch

METHOD :

  • First prepare your idiyappam and allow to cool completely..
  • Spread sevai in wide plate and separate them.. keep aside..
  • Heat a pan with coconut oil and in mustard seeds and urad dal..
  • Allow to crackle, add in cumin seeds, dry chilli, cashew, channa dal, green chilli, hing and curry leaves..
  • Toss it well till it became light golden...
  • Now add in fresh coconut and toss well along with the tempered items..
  • Saute it for few mins till the moisture reduces..
  • Then add in cooked sevai and give it a quick stir..
  • Garnish with a spoon of ghee and serve hot..
  • Enjoy..


PICTORIAL :

First prepare your idiyappam
Spread it in wide plate and 
Separate them.
Heat a pan with coconut oil
Add in mustrad and urad dal
Allow to crackle
Add in cumin seeds and broken chilli
Add in cashew and channa dal
Add in green chilli and curry leaves
Toss till golden
Add in hing
Toss well
Add in fresh coconut
Toss till the moisture reduce
Now done
Add in cooked sevai
Toss it well
Add in a spoon of ghee
Transfer them into a serving bowl
Serve hot
