Aloo Gobi Fry is a made from the fried potatoes & cauliflower and they are saute it in aromatic indian - inspired spices for a quick dinner is ready within 30 to 35 mins..This is a very famous punjabi dish and it can be served in various way..
You can either served it with roti, parathas or sidedish for rice and dal.. It can is super easy, simple to make, delightful and delicious dish quickly made for dinner or lunch.. I loce it so much and i have it with my Egg Chapathi which I posted it soon, so keep watching..

INGREDIENTS :
Potatoes - 2 (chopped into medium size)
Cauliflower - 200 grams (florets)
Onion - 2 (chopped)
Ginger garlic paste - 1 tbspn
Cumin seeds - 1 tspn
Tomato - 1 (de-seeded and chopped)
Chilli powder - 1 tbspn
Coriander powder - 2 tspn
Garam masala powder - 1/2 tbspn
Turmeric powder - 1/2 tspn
Amchoor / Dry mango powder
Kasuri methi - 1 tbspn
Fresh coriander leaves - few (chopped)
Salt - as needed
Oil - 4 to 5 tbspn
Water - 1/4 cup
METHOD :
- Peel the potatoes and chopped them into medium size pieces and wash well.
- Take cauliflower florets and wash in hot water, keep aside in kitchen towel..
- Heat a pan with oil and add in cauliflower florets and fry till golden and remove it to a plate.
- Then add potatoes in the same oil and fry till golden and remove it to a plate..
- Keep aside the fried potatoes and cauliflower, it can be use later..
- Now in the same oil add in cumin seeds, let them to sizzle..
- Then add in ginger garlic paste and toss it lightly..
- Add in chopped onion, fry till transparent..
- Add in chopped tomatoes, salt and cook till they lightly mushy.
- Now add in whole spices powder and mix well along with the tomatoes..
- Add in fresh coriander leaves and toss it well.
- When they combained well, add in fried potatoes..
- Give it a good mix and cook for 5 mins.. (potato is very juicy and flavourful)
- Add in fried cauliflower florets and mix along with the potatoes..
- Aromatic and flavourful smell comes from it..
- At the stage add in water and stir it well.
- Cook till the water evaporate and the gravy leaves it's oil out..
- Add in fresh coriander leaves and mix it well.
- Transfer them to a plate and garnish with coriander leaves..
- Serve hot and enjoy...
PICTORIAL :
Take your Potatoes and cauliflower, wash well
Heat a pan with oil
Add in cauliflower
Fry them till golden
Now it's turn golden
Take it away from the oil
Transfer them to a plate
In the same oil add in chopped potatoes
Fry it into light golden
Then transfer them to a plate
In the remaining oil add in cumin seeds
When they sizzle, add in ginger garlic paste
Saute it for a min
Add in onions
Toss till transparent
Once it done add in tomatoes
Mix well, along with the onion
Add in salt
Now mix it and cook for 5 mins
After 5 mins add in spices powder
Give it a good mix
Add in fresh coriander leaves
Mix well
Now add in fried potatoes
Mix it well, till they combained (5 mins)
Add in fried cauliflower
Mix it well (aromatic smell mum...)
Toss along with the spices, taste will be good
Add in water
Toss well and let it cook till the raw smell leaves
Add in kasuri methi
Mix it evenly
Now it's almost done, keep it for 5 more mins
Now it's done
Transfer them to a plate
Sprinkle some coriander leaves
Serve hot
