Beetroot Poriyal or any kind of vegetables poriyal are often made at home... I find to make it easy, so when i make sambar, i end up making either a vegetable poriyal, Avial, or kootu... as a sidedish... My hubby offer to prepare three verity of sidedish for lunch menu... Poriyal is a preparation where the vegetables are sauted in spices and topped with fresh grated coconut for making poriyals, you can either grated or chop the veggies finely... Here i chopped the beetroot, if you grated it take less time for the veggies to cook... This is my standard recipe for making poriyal with any vegetables .....

INGREDIENTS :
Beetroot - 3 (peel and cut into small pieces)
Grated coconut - 1/2 cupSalt - as needed
Coconut oil - 1 1/2 tspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Small onions / shallots - 4 (finely chopped)
FOR MASALA :
Red chilli - 4 nos
Garlic - 1 cloves
Cumin seeds - 1/4 tspn
- Grind the grinding items into paste.
- Trim both ends, peel the skin and cut it into 1/2 inches thickness.. Keep aside..
- In a kadai add oil, mustard, urad dal, chopped small onion.. Toss it for a min..
- Add in some water, salt and cover it with a lid...
- Toss them inbetween (it takes for 6 to 7 mins) untill they cooked, give it a mix...
- Now add in grinding masala, toss well and cover it with lid for 2 mins..
- In a low flame or till the raw smell is gone..
- Now add fresh grated coconut and toss well..
- It's ready to serve...
PICTORIAL :
Take beetroot
Peel the skin and cut them into pieces
Take all your ingredients
Take masala items
Prepare your masala
Heat a pan with oil, add in mustrad,
urad dal allow to crackle
Add in chopped onion
Toss well till gloden brown
Add in chopped beetroot
Toss well
For 3 mins..
Add in some water
A pinch of salt
Toss well
Cover it with lid till it's cooked
Add in masala
Toss well
Cover it for 2 mins till raw smell is gone
Now add in fresh grated coconut
Mix well
Serve hot
