Aattu kudal varatiyathu is a traditional recipe of tamil nadu. This is one of my mom's best signature dish and this is prepared right in her kitchen. My mom really love it so much, but yet some p[eople have a dislike over this yummy curry. If you ask me if its prepared in the correct way then it will not have any smell and that's the main for dislike I guess.
And if you tasyte the curry once sure you are going to love it like I do. This pair fantastic with plain white rice / Idli / Dosa. And this goat intestine is the best remedy for mouth alcer. Whenever I got those irritating sores then my mom used to make this recipe.. And after having this curry I really feel better. When i was small whenever my grandpa buy this goat intestine its very huge work for my mom to clean those intestines... But now a days my hubby do these works for me.. and he thoroughly cleaned and chopped like mutton..
So I never have to bother about cleaning anymore.Then cleaning under normal water like any other meat is enough. Always make sure the intestine is cleaned properly before proceeding to cook. Lets see how to prepare this Kudal varatiyathu / Goat intestine curry....Here we use small intestine, large intestine, liver, kidneys, Kirshah, stomach lining of goat...

INGREDIENTS :
Goat intestine - 1 kg (large intestine, small indestine, liver, kidney, Kirshah, Stomach lining)
Turmeric powder - 1 1/2 tspn
Salt - as needed
Roasted rice flour - 2tspn
Seasame oil - 2 tspn
FOR GRINDING:
Small onions - 10, Roasted cumin powder - (grinded into paste)
Ginger garlic paste - 2 spn
Coconut - 1/2 cup (Into paste)
Red chilli - 15, Coriander seeds - 4spn, (Fried and powdered)
FOR TEMPER :
Seasame oil - 2 tbspn
Mustard seed - 1 spn
Shallots / small onions - 4 (chopped)
Curry leaves- as required
- To start this recipe wash the intestine well with lots of water and cut into small pieces.
- In blender add shallot, roasted cumin powder and grind into paste.
- Place a goat intestine in a heavy bottomed vessel and add in grinded onion paste, turmeric powder, and some water.
- Now add ginger garlic paste, mix well and cover it with lid.
- It should be boiled in one side untill it turns soft, on other side in a kadai add dry chilli and coriander seeds roasted lightly with one tspn of oil.
- Now grinded masala into powder and transfer into a bowl.
- Then also grind coconut in to paste, keep aside.
- Now again come to the curry, when it come to boil add a spoon of oil to the curry.
- When it half cooked add salt and again cover it with lid untill it cooked well.
- Now open the lid and check whether it cooked well.
- Then add in roasted chilli coriander masala, coconut masala in and mix well.
- Allow to cook for 10 mins till raw smell is gone.
- Now in another stove place a kadai add mustard, shallots / small onion, and curry leaves.
- Toss well untill it became light brown in colour. Atlast add a spoon of chilli masala, its only for redish colour.
- When the raw smell is gone add the tempered items into the curry.
- Now the stove in low flame add in roasted rice flour and mix well. Cook the gravy untill it became thick.
- Now the Aattu kudal varatiyathu is ready to serve.
- Serve hot with rice.
PICTORIAL :
Take goat intestine wash well and cut into pieces
Add to the thick bottom pan
Add to the intestine
Some water
Mix evenly
Add in turmeric powder
Add in ginger garlic paste
Mix evenly
Cover itfor 10 mins untill it bring to boil
Now open the lid and add a spoon of oil
It should be cook for 20 mins untill intestine cook well
In another pan add dry chilli
Coriander seeds
A spoon of oil
Toss lightly
Done
Let them to cool and add to the blender
Grind it into powder
In the same jar add coconut
Grind it into paste
When the water is evaporate check whether it's done
Now add in salt
Masala powder
Coconut paste
Mix evenly in low flame for 10 mins
In another pan add seasame oil
Add in mustard
Chopped shallots and curry leaves
A spoon of masala for colour
Now pour to the curry
Let it cook for 4 - 5 mins
Now add in roasted rice flour
Mix well and cook till it's done
Now it's done
