Sugar fried bananas on bamboo skewers, also know as banana cue.. among filipinos, is a popular snack food in philippines. It's widely sold on the streets in food carts or in small food stalls... Banana cue is simply deep fried ripe nandram bananas coated with caramelized sugar while it's cooking. It's not marinated and skewered as it's being cooked, and definitely not grilled over hot charcoals...
The fried banana are only placed on bamboo skewres afterwards for ease of eating.. It is being stick and also due to it's caramel color when done, It got its name "banana cue". It is easy to make and it is delicious. These bananas absorb sweet, soft, turn soggy when it fried with sugar... I pefer mine to be much riper, juicier, and sweeter with extra coating of caramel...
I cut these bananas into smaller pieces prior to frying to make it easier for my children to eat, after making it just serve it on small plates with fork... I hope you try this recipe and enjoy it as well....
Preparation time : 2 mins
Cooking time : 15 mins
Serve - 3
INGREDIENTS :
Banana - 2 (cut into pieces)
Ghee - 1 tspn
Sugar - 3 tbspn
METHOD :
- Peel bananas and slice into 1/2 inch thick. set aside.
- Place frying pan on a stove and turn settings to medium..
- Add a tspn of ghee when its melt add in sliced bananas.
- Toss for a mins and then add in sugar wait for 2 mins untill it starts melt and caramelized.
- Turn down heat a little so you don't burn the sugar.
- Using a cooking spoon or spatula to move them gently around the pan for several times.
- So that the bananas are covered with the caramel..
- When you see the melted sugar floats on the top of the bananas...
- Now serve with a cup of milk.
PICTORIAL :
Take bananas
Cut into slice
Heat a pan with ghee
Add in bananas
Toss for 2 mins
Add in sugar
Wait for 2 mins till sugar melts
Move them gently around the pan
See the sugar caramel coated well with bananas
Done
