Baby corn pepper fry


Baby corn pepper fry is my recent trial though I have tried this recipe with other veggies like mushroom and gobi. I love anything pepper flavoured and my hubby takes after me... So I make sure to add pepper powder in most of the dishes i cook for him.... Either for stuffing for parathas or for any rice or even for pulaos.....


I try to replace red chilli with pepper where pepper where ever possible, he loves pepper flavour very much so he doesn't complaint at all. I actually started to buy baby corn regularly only after my kids started to like veggie so whenever i see a pack of fresh baby corn i buy it....Check out other babycorn 65 that i have posted already in my blog...


So i hope that you try this recipe and let me know how it comes out.....

Preparation time : 10 mins
Cooking time : 15 mins
Serve - 2 
Recipe cuisine : south indian

INGREDIENTS :

Baby corn - 10 nos (sliced)
Onion - 1 (large chopped finely)
Capsicum - 3 tbspn (finely chopped)
Jeera - 1/2 tsp
Curry leaves - a small sprig
Oil - 3 tspn
Salt - to taste

To roast and grind :

Pepper - 3/4 tsp
Fennel seeds - 3/4 tsp

METHOD :

  • Rince baby corn, trim the edges and cut them into thin rounds.Set aside.
  • Dry roast pepper and fennel seeds for 3 mins or nice aroma comes...
  • Cool down and grind it coarsely... and set aside.
  • Heat a pan with oil add in jeera, curry leaves allow to splutter..
  • Then add in pepper and fennel powder and saute it in the oil.
  • Now add in onion and saute till it becomes transparent. 
  • Then add in capsicum and saute it for 2 mins..
  • Add in baby corn and give a quick mix, sprinkle little water and covered for 5 - 7 mins.. 
  • (Check inbetween and flip over to avoid burning at the bottom)
  • If it sticks add little more oil and keep cooking untill baby corn turns soft and has absorbed the flavours... 
  • Then switch off. Serve hot with rice / roti or enjoy it as a appetizer like i did.


PICTORIAL :

Dry roast pepper and fennel seeds
Powdered it 
Take your ingredients
Heat a pan with oil
Add in jeera and curry leaves
Then add in pepper and fennel powder
Add in chopped onions and saute for 2 mins
Then add in capsicum
Add in baby corn and sprinkle some water
Covered it with lid
Cook till baby corn turns soft and absorbed the flavour
Done
Serve it with rice 
Enjoy...
