Dosa is one of the staple food in our home.. Hubby and my sister loves dosa's and idli's more than anything else.. I love to experiment the mushroom toppings on dosa.. It's same like the madurai kari dosa but i make it with mushroom toppings. Simply rice crepes stuffed with egg and spicy mushroom masala makes a satisfying meal..
This a simple to make spicy dosa, filled with mushroom masala and it is healthy tasty and low calorie filling.. My love for mushrooms made me to try out this dosa, and to my suprise it turned out so yum. I used a basic onion masala gravy to put the mushroom in.

If you wish you could add some ground up cashew and coconut paste too and make this toppings even more rich... I hope you try this.. Off you go to the recipe.
Preparation time : 10 mins
Cooking time : 20 mins
INGREDIENTS :
Dosa batter as needed
Oil as needed
Egg - 1 (per dosa)
Salt - 1/4 tspn
FOR MUSHROOM MASALA :
Oil - 2 tbspn
Ginger garlic paste - 1 tbspn
Onion - 3 (chopped)
Fennel seeds / sombu - 1/2 tspn
Chilli powder - 1 tspn
Coriander powder - 1/2 tspn
Garam masala powder - 1/2 tspn
Pepper powder - 1/2 tspn
Mushroom - 250 gms (chopped finely)
Salt - as needed
Coriander and mint leaves - few (chopped)
METHOD :
- Heat oil in a pan, add in feenel seeds, chopped onions toss well till transparent..
- Now add in chopped mushroom, salt saute for 5 mins till it turns light brown.
- Add in ginger garlic paste and all the spices powders. Mix well....
- Now add in pepper powder and chopped coriander leaves..
- Cook this for 10 mins so the mushroom gets cooked...Your masala done.
- Now take a bowl broken egg on it and add in salt, and beat well. keep aside.
- Take dosa batter and start making dosa, now add in beaten eggs first.
- Place some mushroom masala stuffing on the top.
- Now drizzle in some oil and let it cook for a min so the bottom get slightly crispy.
- Then turn over it and make slashes on the dosa with spatula.
- Cook it for 1 mins till the masla minkled with dosa..
- Now it's done, serve hot...
PICTORIAL :
Take your ingredients
Heat a pan with some oil
Add in feenel seeds
Add in chopped onions
Saute well till transparent
Now add in chopped mushroom
Add in salt
Again toss well
Now cook for 3 mins
Add in ginger garlic paste
Now add in all spices
Toss well
Now add in pepper powder
Now add in coriander and mint leaves
Now the stuffing is done
Broken egg in a bowl
Add in salt
Beat well
Now take this items to make dosa
Heat a pan
Make dosa and drizzled some oil
Now add in beaten eggs
Spread some mushroom topping on the top
Now turn it
Make slash on the dosa so it cook well
Now it's done
