Malabar Fried Chicken Briyani


There are many ways to make briyani, I found this to be the most simple easy way to prepare malabar fried chicken briyani. It is a classic festive dish at wedding, housewarming parties, eid celebrations as well as other important occasions... This malabar - style fried chicken briyani is a delicious meal in itselfs and neds no accompaniments.. This rich aroma of the spices in this imperssive dish will warm home....


This briyani is slightly differant that compare to the normal briyani, here the chicken is marinated in thick curd, spices powder, and green chillies and then roasted in coconut oil... Which gives execallent flavour to the chicken when we taste each bite of it...For the briyani make a masala and that can be prepared  by cooking the marinated fried chicken first and make layer's with 80 % boiled rice and cooked by sealing the handi and using dum style...




This type of preparation makes the chicken soft and tender and also gives flavourful exeperience...This malabar fried chicken briyani recipe wont fit under the "Authentic" or "Traditional" briyani recipe...

Marination time : 1 hour
Cooking time : 45 mins

INGREDIENTS :

TO MARINATE CHICKEN :

Chicken leg - 5
Yogurt - 3 tbspn
Kashmiri chilli powder - 2 tbspn
Coriander powder - 1 tbspn
Garam masala powder - 1 tbspn
Turmeric powder - 1/4 tbspn
Cumin powder - 1/2 tsp
Ginger garlic paste - 2 tbspn
Green chillies - 4 (cut it into pieces)
Coconut oil - 4 tbspn
Coriander and mint leaves - few
Salt - 2 tbspn

FOR BOIL RICE :

Basmati rice - 3/4 kg
Bay leaf - 2 
Cumin seeds - 1 tspn
Salt - 1 tbspn
Coriander and mint leaves - few

FOR BRIYANI :

Ghee - 3 tbspn
Coconut oil - 2 tbspn 
Bay leaves - 2
Cinnamon - 2 sticks
Cloves - 3 nos
Cardamom - 3 nos
Onion - 3 (sliced)
Tomatoes - 3 (sliced)
Green chillies - 4 (sliced)
Chilli powder - 2 tbspn
Coriander powder - 1 tbspn
Garam masala powder - 1 tbspn
Cumin powder - 1/2 tsp
Ginger garlic paste - 2 tbspn

METHOD :

Step : 1

  • First marinate the chicken for that clean the chicken leg well and make slashes on it...
  • In a mixing bowl combain all the ingredients which given in the "TO MARINATE CHICKEN" and marinate the chicken for 1 hour.
  • After 1 hour fried the chicken by heating a pan, add in marinate chicken and fry it to deep dark brown..
  • Now keep it aside...


STEP : 2

  • Stock the rice for 1/2 mins, In a sauce pan add water, and bay leafs, cumin seeds....
  • Now add in salt, cilantro, mint leaves and let them to boil.
  • Now drain the rice and add to the boiled pan.
  • Let them to boil for 15 mins and cook it on high flame .. keep a eye on it...
  • The aroma flavour comes out from it, so it should make the briyani good.
  • Now the rice is 3/4 cooked when you taste it should have a bite.
  • Atlast drain it and keep aside....

STEP : 3

  • Heat ghee / oil in a deep vessel. And then add in bay leaf, cinnamon, cloves, cardamom and fry for a min.
  • Then add in sliced onion, green chillies and toss it till transparent or light brown, Collect some onions from oil, Keep aside...
  • Add in chopped tomatoes and toss well untill it mushy..
  • Now add in ginger garlic paste, chilli powder, coriander powder, cumin powder, garam masala powder, 
  • You may or may not add salt, depends on ur taste..(but i add salt)
  • Now the gravy is ready, so place it on the tawa... 
  • Add chicken fry to the masala preparaed and stir lightly.. 
  • Now add in 1/4 th of the cooked basmathi prepared into this along with fried onions..
  • Spread  in 1/2 of the remaining rice evenly, Then add in fried chicken excess oil in the kadai.
  • You may also add some coriander leaves and mint leaves on the top for fragrance..
  • Cover the entre pot with cloth and cover with a plate..Place a weight over it and let it cook on a very low flame for 20 - 30 mins.
  • Now remove the weight and lid and fluffy the rice carefully...
  • Serve hot with raita......

NOTES : 

  1. Soaking rice and marinate chicken is very important, so never skip it.
  2. Use good quality basmathi rice for this, I used Indiagate basmathi rice (classic).
  3. Cooking the rice perfectly is important. If you over cook it the whole briyani will be mushy.
  4. It will just take 5 to 7 mins for the rice to get cooked.
  5. After dum no need to open the cloth suddenly, we should wait for 10 - 15 mins.

Take chicken leg
Wash and make slashes
Ingredient to marinate
Ingredients to make briyani
Take thick yogurt in a mixing bowl
 Add in all sipes
Salt
Add in coriander & mint
Add in ginger garlic paste
Add in chopped red chillies
Add in coconut oil
Mix well
Add in chicken pieces
Mix well  and marinate for 1 hour
After 1 hour heat a pan
See how the masala absorb in the chicken 
and the oil seperate from the chicken
Place the chicken on the tawa
No need to add oil the chicken itself fry
Cover it with lid
Flip over the chicken
Again flip over
Fry till chicken cooked in dark brown in colour
Soak the rice upto 1/2 hour for boiling 
In a pan add water and bay leaf
Cumin seeds
Chopped coriander and mint leaves
Mix well
Bring to boil
Add soaked rice
Season with some salt
Now the rice is 80 % cooked
Drain it and keep aside
Take the spices for briyani
Add ghee and oil along with spices in thick bottom pan
Add in onions
Sliced green chillies
Toss well untill it change into brown
It's done 
Take some fried onion in a plate
Add chopped tomatoes in 
Add ginger garlic paste and toss well 
Now add in all the spices powder
Then add some salt
Toss well till it mushy
Place the pan on the dum stone tawa
Untill the oil leaves the gravy
Place the chicken one by one inside the pan
On the top the chicken spread boiled rice
Some fried onions
Then again spread rice
Let over fried chicken oil
Spread it on the top
Sprinkle some coriander and mint leaves
Cover it with a cloth and lid
Place the stone on the top of the lid leave it 20 mins in slow flame
Briyani is done
Flip the rice carefully
Now it's ready
Serve
