Baby Corn Masala


A creamy babycorn masala recipe is made in the classic north indian style.. There are few dishes that i make with babycorn.Some of them are in the draft as well which i posting soon. So keep watching my blog friends...Babycorn blends well with any gravy or sauce, be it north indian, indo chinese or even world cuisine..The gravy is so yummy and it goes well with rotis,naan and chapathi..

The flavour of tossed onion and tomato gives execellant taste to the masala.. as well as the spices which i added in this gravy gives awesome smell and onion coconut cashew paste gives creamy texture to the gravy...This babycorn dish does not have any heavy ingredients like butter and cream.. So it light and yet delicious..

Preparation time : 10 mins
Cooking time : 25 to 30 mins
Serve : 2

INGREDIENTS :

Babycorn - 10 (cut and sliced into two pieces)
Ginger garlic paste - 1 tsp
Chilli powder - 1 tsp
Coriander powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Coriander leaves - few
Oil - 3 tsp
Salt - as needed

FOR MASALA :

  1. Onion - 1, Tomato - 1(saute it in oil for 2 mins and grind it into paste)
  2. Coconut - 1/2 cup, Cashew - 5, Shallots / small onions - 6 (gring into smooth paste)


METHOD :

  • Cut babycorn into sliced and boil in water for 5 mins...
  • In a kadai add a spoon of oil and add in chopped onion, tomato and saute it for 2 mins and grind it into paste.
  • Then also grind coconut, cashew, shallots into smooth paste...
  • In a pan add some oil and add grinded onion paste and toss well..
  • Now add in ginger garlic paste and toss well.
  • Then add all spices like chilli powder, coriander powder, garam masala powder and toss well..
  • Now add in babycorn and mix evenly that the masala is well coated on babycorn..
  • Add in salt and grinded coconut masala on it and again toss well.
  • Add some water on it and let it cook for 15 mins...
  • Now the oil floated on the top and masala looks yummy..
  • Garnish with chopped coriander leaves and serve it with rotis.....


PICTORIAL :


Take your babycorn pieces
Sliced it 
Boil it for 5 mins 
In a kadai add oil and saute onion and tomoto for 2 mins
Take it in a blender
Grind it into smmoth paste
Take coconut, cashew, shallots in a blender
In to smooth paste
Heat a pan with oil add onion paste
Ginger garlic paste
Chilli powder
Coriander powder
Garam masala powder
Toss well
Now add boiled baby corn
Toss well with the masala
Add in salt
Add in coconut paste
A little amount of water allow to cook for 15 mins
Now it done add coriander leaves
Serve
