Somebody making it plain yellow or orange, But I wanted to make it colourful. I vaguely remember I ate this way in a marriage long long ago... So I wanted to make it colourful that way... Treat to your eyesas well! This is a very esy sweet.. You can try this for your Diwali.....

INGREDEINTS :
Gram flour / Kadala mavu - 1 & 1/2 cups
Baking soda - 1 pinch
Cardamom powder - 1 pinch
Cloves - 2 (powdered)
Cashew - 8
Ghee - 1 tspn
Food colour - Orange, green, yellow..
METHOD :
- Take gram flour in a sifter and sieve it, Add in water and mix to a smooth batter.
- Add in some baking soda and food colouring, mix well.
- The batter should be little thick, it should be thinner than bajji batter..
- Now divide the batter into 3 bowls..
- Then add in orange, yellow, green and mix well..
- Now heat a oil for deep frying.
- Take a boondi karandi or a perforated ladle..
- Hold it over oil. pour a ladle full of batter over the ladle and spread it out..
- Take a yellow colour batter into a perforated ladle.. The boondhis will fall drop by drop.
- Fry till they are soft. drain them and set aside..
- Repeat the same this for two maore batter also..
- Now the colour full boondhis are ready for the preparations.. Keep aside..
SUGAR SYRUP :
- Take sugar and water in a pan, mix well. Bring it to boil and cook till it reaches a single string stage.
- When you take out spoon from the syrup and see the last drop falling from the syrup is to be single string consistency..
- At the time switch off the flame, add in cardamom powder, Cloves powder and mix well.
- Add in colourful boondhis and give a mix.. Set aside..
- Heat a pan with ghee add in cashew and fry till golden, keep aside..
- Pour it to the boondhi and mix well
- Now yummy Boodhis are ready to serve..
- Store it in airtight container..
PICTORIAL :
Sieve the gram flour in a bowl
Now it's done
Give a mix
Add in water
Make smooth paste like bajji batter
Add in baking soda
Give a mix
Divide the batter into three bowls
Mix the colour to the batter
Take a boodhi ladle
Heat a pan with oil
Hold it over the oil
Spoon some batter on the ladle
See how it beautifully
Drain it from the oil
In to a tissue paper
Pour the orange batter
Fry them in oil
Drain them into tissue paper
Next green batter
Fry it
Drain it, Keet aside
Heat a pan with sugar and water
Add cardamom powder
Cloves powder
Alow to boil
When it became thick
Add in fried boodhis
Mix well.. Keep aside
In a pan add ghee and add in cashews
Fry them till light brown
Add it to the boondhi mixture
Mix well
Now it's ready to serve
Store it in a air tight container
