Egg Poriyal / Muttai Podimas


Egg poriyal is a very easy and simple stir fry made with eggs.. It goes well with curd rice, bread and chapathi.. You can have it for breakfast, lunch in between meals when you feel hungry or for dinner... It can be used as a stuffing for chapathi and sandwiches.. I often make chapathi rolls with egg poriyal for my kids.. Soon i post that recipe in my blog..


It is simple to prepare, perfect for all the bachelors or for that matter anyone who wants something appetizing and have less time on hand... You can prepare thic quick stir fry even at the last minute just before sitting for lunch as its better not to precook eggs and eat later, so make sure you cook eggs and eat it fresh..


My hubby enjoyed with plain curd rice... taste is superb and delicious..My aunty prefer this type of egg poriyal for rice.. She told that the eggs are rich in proteins and great to be included in our diet.. So I hope that you must try this recipe and let me know how it's turns out from you...

Cooking time : 10 mins

INGREDIENTS :

Eggs - 3
Shallots / Small onion - 25 nos / 250 gms (chopped finely)
Dry chilli - 3 (broken)
Gingelly oil - 3 tbspn
Salt - as needed

METHOD :

  • Take some shallots and peel the skin, chopped it finely.. set aside.
  • Now heat a pan with oil add in small onions and broken dry chilli..
  • Stir well for 2 mins and add in salt and mix well.
  • Now the onions are became transparent..
  • Then crack open eggs on the pan..
  • Mix well along with the onions, cook it in low flame for 3 to 4 mins..
  • Scrap the pan if it sticks and fluff it up until dry and raw smell of eggs leaves..
  • Switch off the flame, serve immediately..


PICTORIAL :



 Take shallots
Peel the skin
Chopped it finely
Heat a pan with oil
Add in chopped onion
Add in broken chilli
Toss well
Add some salt
When it became transparent
Crack open eggs on the pan
Scrap the pan
Keep it in low flame
Stir well
Fluff it up
Now the eggs leave the pan
When the raw smell is gone
Switch off the flame
 Serve immediately
 Enjoy..
