Mutton Pulao / Lamb Pilaf


Mutton pulao is a dish fairly common in north indian and pakistani cuisine that incorporates mutton into a rice pilaf... Meat is cooked with rice and spices.. The mutton pulao recipe with the aroma of cardamom, cloves and cinnamon... Bring to boil and cook covered till the meat is tender which taste is delicious....



Lamb is my hubby's favourite meat... He loves it more than the chicken.. so i tend to cook it often.. cooking lamb in slow heat gets tender and just melt in your mouth.. The one thing you got to remember is try to get the best lamb you could find... He loved this so much because it doesn't use lot of spices, just use simple spices but the aroma from the pilaf is heavenly..

INGREDIENTS :


Basmati rice - 2 cup
Mutton - 1/2 kg
Onion - 2 (sliced)
Tomato - 4 (sliced)
Green chilli - 4 (sliced)
Ginger garlic paste - 1 tbspn
Thick yogurt - 1 cup
Chilli powder - 1 tbspn
Coriander powder - 1 tspn
Cumin powder - 1/4 tspn
Garam masala powder - 1/2 tspn
Turmeric powder - 1/2 tspn
Ghee - 2 tbspn
Coconut oil - 3 tbspn
Salt - as needed
Water - 2 cup
Milk - 1 1/2 cup
Mint, coriander leaves - few

TO TEMPER :



Cinnamon sticks - 4
Cardamom - 3
Cloves - 4
Star anise - 1
Cumin seeds - 1/2 tspn
Fennel seeds - 1/4 tspn



METHOD :


  • Soak the rice for 15 mins.. Drain the rice and keep aside..
  • Now prepare all your veggies and mutton...
  • Heat a pressure cooker with ghee and oil.. 
  • Add in whole spices and toss lightly..
  • Now add in sliced onion and chilli and toss till golden brown..
  • Now add in turmeric powder and mix well.
  • Add in ginger garlic paste and toss along with the onions..
  • Add in chopped mutton pieces and toss well.
  • Keep it till roasted for 5 mins along with the onion mixture..
  • Now add in all spices powder, and mix well..
  • Add in chopped tomatoes and little bit of salt..
  • Keep toasing till the tomatoes mushy..
  • Now add in curd and give a mix.
  • Keep it for 10 mins in low flame..
  • So the masala are blended with the mutton, which gives aromatic taste..
  • Close the lid and whistled it for 4.
  • Now the mutton is done.. open the lid, give a mix.
  • Add in soaked rice an dmix well for 2 mins.
  • Then add in water and milk, give a mix.
  • Add in chopped coriander leaves and mint leaves and whistled it for 3..
  • Now the pilaf is ready, fluff it lightly..
  • Serve and enjoy...



PICTORIAL :


Take your ingredients
Soaked the rice for 15 mins
Tempered spices
In a pressure cooker add in ghee and oil
Then add in cinnamom, cloves, cardamom, star anise
Few cumin seeds
Add in fennel seeds
Add in sliced onion and chilli
Toss till golden brown
Add in turmeric powder
A spoon of ginger garlic paste
Now fresh mutton pieces
Toss along with the onion mixture
Now add in all spices powder
Chopped tomatoes
Little bit of salt
Give a mix, till it mushy
Then add in curd 
Mix well.
Let it cook for 10 mins
Pressure cook for 4 whistled
Now the yummy gravy is ready
Drain the rice
Give a light mix
Add in soaked rice
Mix for 5 mins
Now it's done
Add in water
Add in milk
Check the salt
Add in coriander leaves and mint leaves
Mix well
Whistled it for 3
Mum yummy pulao is ready
Fluff is lightly
Done
Serve in a plate
With raita or mutton gravy
