Thengai Sadam / Grated Coconut Rice

 

Thengai Sadam is very simple and easy recipe, even beginners can prepared this without fail.. Coconut rice is a flavourful rice and is made during festivals like pongal and navratri some of the neivediyam or prasad, we were served in south indian temples were pongal, curd rice and coconut rice.. 


Today i prepare to recreat a magical taste and flavor.. Still trying and i hope that with Sailusfood, I shall be able to get that taste.. Here iam using fresh grated coconut... If you have grated the coconut already, then its easy to prepare this rice for lunch... It taste best with that fresh coconut.. I make such easy rice recipe dishes when i want to cook somthing easy.. Coconut rice also goes very well in the tiffin box lunch....




Here i prepared south indian style coconut rice for lunch.. It was quick and easy to prepared, when the rice and coconut is ready...So i hope that you must try this recipe and let me know how it's turns out from you.....

INGREDIENTS :

Boiled rice - 2 cup (wash and cook such that each gras is seperate)
Fresh coconut - 1 cup (grated)
Salt - as neded

FOR SEASONING :

Coconut oil - 1 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Channa dal - 1 tbspn
Cashew - 6 to 7
Cumin seeds - 3/4 tspn
Asafoetida - 1 pinch
Green chilli - 3 or 4 (chopped)
Red chilli - 2 (broken)
Curry leaves  - few

METHOD :

  • First cook the white rice, spread the cooked rice on a wide plate and allow to cool..
  • Season with salt and fresh coconut and keep aside...
  • Heat a pan with coconut oil, add in mustard seeds and allow to crackle..
  • Now add in urad dal, channa dal, cumin seeds, dry chilli and cahew, allow them to turn red..
  • Now add in chopped green chilli and curry leaves and toss it lightly..
  • Now add in asafoetida and roast it for few sec..
  • Now switch off the flame and add it to the seasoning to the rice and combain well.
  • Serve hot with any curry of youer choice or with just pickle and appalam...


PICTORIAL :


First cook the rice and transfer it into a wide plate
Spread it well and allow to cool
Add in fresh grated coconut 
Some salt and mix well, keep aside.
Heat a pan with coconut oil
Add in mustard and urad dal
Allow to crackle
Add in cumin seeds and red chilli
Add in cashew and channa dal
Now add in chilli and curry leaves 
Toss it lightly 
Add in asafoetida 
Toss it for few sec
Pour it to the prepared rice
Mix evenly
Now transfer it to serving bowl
Serve hot
