Lamington cake


A Lamington is an Australian dessert.. Lamington are little sponge cakes coated in chocolate and grated coconut... A traditional Auatralian treat that appeals to most.. It is a special type of cake made in austalian origin... Any firm type of plain cake can be used, use can use butter cake, pound cake, maderia cake, leftover cake or any sponge...


Here the soft squares or more often these days rectangles of sponge cake coated first in a layer of traditionally chocolate sauce, then in desiccated coconut... Some body stuffed fruit jam and then dip in chocolate sauce and coconut an dserved with a cup of tea... It commonly found is South african and outlets such as cafes, lunch bars, bakeries, home industries and super markets..


 This is one cake which was always in my mind for quite a long time.. But i totally forget about it as days pass by, but my bad luck i didn't able buy dessicated coconut yesterday my hubby brought the dessicated coconut i was plan to posted this cake.. I had all the ingredients on hand and immediately gave it a shot..



It turns out delicious and yummy, I took couple of pieces for me and packed the whole thing for my hubby's friend, Because they has been asking me to bake something for them.. They were suprised to have it and loved it too... It was heaven.... So i hope that you must try this and let me know how it's turns out from you...



Preparation time : 10 mins
Baking time : 20 to 25 mins
Makes - 12 pieces

INGREDIENTS :

All purpose flour / Maida - 1 cup / 120 garms 
Sugar - 1/4 cup (powdered)
Baking powder - 1 tspn
Baking soda - 1/4 tspn
Salt - a pinch
Unsalted Butter - 70 grams (soften)
Egg - 1
Vanilla essence - 1 tspn
Milk - 1/2 cup / 120 ml 

FOR CHOCOLATE SAUCE :

Icing sugar - 1 cup
Cocoa powder - 2 tbspn
Water - 1/4 cup
Unsalted butter - 1 tbspn
Dessicated coconut - 1 cup or 1 1/2 cup

METHOD :

  • Preheat oven to 180 Degree C.
  • Take folur, salt, baking powder,baking soda in a bowl.. keep aside..
  • Take butter, sugar in a bowl and beat till creamy and fluffy.
  • Add in egg and vanilla, beat again and till fluffy.
  • Now add in flour mix and milk alternating, ending with flour..
  • Pour this into a prepared pan..(i choose round pan but you can use square pan)
  • Bake it for 20 to 25 mins.. Remove it and cool completely.. 
  • Once it cooled, slice the cake and cut it into square pieces..
  • Now make chcolate glaze, take water and butter in a bowl, microwave it for 30 mins till it's melted..
  • Take sugar, cocoa powder in a bowl and mix well.
  • Add water butter mix slowly and mix well.The glaze should be little thick..
  • Now take a cake slice and dip it in chocolate sauce and roll in coconut..
  • Serve and enjoy..


PICTORIAL :



 Take all your ingredients
 Take flour in a bowl
 Add in baking powder and baking soda
 Add in salt
 Mix well with spoon
 My butter was too cold,
 so i pop it microwave till it's melted
 Add butter in a wide bowl
 Add in powdered sugar
 Whisk well till smooth
 Till soften
 Add in egg
 Add in some vanilla
 Beat till it is fluffy
 Now add in a portion of flour mix
 Add in some milk
 Mix well
 Add in another portion of flour mix and fold gently
 Prepare your cake pan by buttering
 and dusting it with flour
 Now pour the batter and spread it evenly
 Bake it till done
 Insert the toothpic 
It's comes out clean
 Let it be cool
 Cut the edges
 Make it like squares
Now it's done
 Now take sauce ingredients
 Combain water and butter in a bowl
Pop it in microwave till it melts
 Take some icing sugar in a bowl
 Add in cocoa powder
 Mix well
 Now slowly add in butter mixture
 Now it's done
 In this consistency
 Now all are prepared
 Take some dessicated coconut in a plate
 Spread it 
Now take a slice and dip it in chocolate sauce
 Fully coated
 Take away
 Place it on the coconut
 Roll it fully, till it covered with coconut
 Now it's done
 Serve
