Bhindi Stir Fry / Lady's Finger Stir Fry


South indian lunch menu doesn't complete without this main sidedish - Poriyal. At home everyone like poriyal or stir fry for lunch. Simple rasam and a poriyal makes our meal more comfort and filling. Vendakkai poriyal is one healthy and simple poriyal / stir fry that can be done in a easy way...



We should in very low flame to avoid sticky threads which comes out from it... It is a smiple trick and it gives great result too. Some people used to have this fry as a sidedish for chapathi too! so try this yummy recipe and let me know how it is comes out....

Preparation time : 10 mins
Cooking time : 15 to 20 mins..

INGREDIENTS :

Vendakkai / lady's finger - 300 - 350 grams
Turmeric powder - 1/2 tspn
Sambar powder - 1 tbspn
Grated coconut - 1/2 cup
Salt - as needed

FOR SEASONING :

Coconut oil - 1 1/2 tspn

Mustard seeds - 1 tspn
Urad dal - 1 tspn
Curry leaves - few

METHOD :

  • Whip the Lady's finger well with the kitchen towel and trim both ends and cut it into 1/2 inch thickness..
  • In another kadai add oil, mustard, urad dal and allow to splutter and add in curry leaves.
  • Add in chopped lady's finger and mix for a min...
  • Add in some turmeric powder and toss lightly... 
  • Fry them for 6 to 7 mins untill they get brown, and add in salt and give a mix...
  • Now add in sambar powder, and toss well..
  • In a low flame or till the raw smell is gone..
  • Now add fresh grated coconut and toss them. 
  • It's ready to serve..

PICTORIAL :


Take lady's finger
Chopped it 
Heat a pan with oil
Add in mustard and urad dal
Allow to splutter
Add in curry leaves
Now add in chopped lady's finger
Toss well for 6 to 7 mins
Add some turmeric powder
Toss well till it cooked
Add some salt 
Then some sambar powder
Toss well till raw smell is gone
Add in fresh coconut and mix well
Serve
