Coconut Milk Ghee Rice


Coconut milk rice is also called as coconut rice, And it can be prepared within 30 mins.. And the other name in andhra is kobbari annam, It is very delicious, mildly flavoured and tastes great with any good simple gravy... This coconut milk is fragant with subtle aroma of coconut since fried coconut is also used.. This makes one of the best lunchbox recipes for kids and working adults too...This easy coconut milk rice doesn't need any sidedish, it tastes good on its own.

INGREDIENTS :

Rice - 1 cup (Seeraga samba rice)
Coconut milk - 1 cup (thick milk)
Water - 1/2 cup
Onion - 1 sliced (big)
Green chilli - 3 (sliced)
Tomato - 1 (sliced)
Ginger garlic paste - 1 tbspn
Coriander leaves - few (chopped)
Salt - as needed

TO TEMPER :

Ghee - 3 tbspn
Bay leaf - 1 
Cinnamon - 2 small sticks

METHOD :

  • Wash and soak rice for atleast 10 mins..
  • Heat a cooker with ghee and the tempering items fry till fragrant....
  • Add in onion and green chillies..and saute it well till it transparent..
  • Now add in ginger garlic paste and chopped coriander leaves and toss lightly...
  • Which gives aromatic smell to the rice while having...
  • Now add tomatoes and saute it lightly 
  • Add in coconut milk and some water allow to boil...
  • Now add in soaked rice, salt and mix once..
  • Now close the lid and whistled it for 3..
  • After that, it is ready, Serve hot with any gravy
  • Enjoy it...

Soak the rice for 10 mins
Take your ingreidents
Heat a pressue cooker with ghee and tempering items
Now add in onions and chillies
Toss till transparent
Now add in ginger garlic paste
Toss it and add in chopped coriander
Now add in tomatoes
Toss lightly
Now add in coconut milk
Some water
Then add in soaked rice 
Salt
Close it with lid, and whistled it for 3
Now it's ready to serve
Serve hot with simple gravy
