Pulka Fulka (Indian soft bread) with broad beans


Pulka fulka is a flat bread made with wheat flour. Chapathis, Roti, Rotili, Phulka, flat bread are some of the names given to this wounderful indian bread.. Pulka roti is most popular and famous gujarati roti and it is very easy to make.. The pulka fulka with the broad beans helps you plan your lunch and dinner....


Most of gujarati household enjoyed this as a daily meal.. It should be cooked on a sigri but a gas or electric stove will do if a sigri is not available.. We have a hand full of flour for shaping the dough into round and it is cooked on the stove top and finished sooking on an open flame which puffs up the bread into layers making it very soft..and it is rolled with any subzi (Broad beans subzi) which gives awesome and delicious taste...as well as a healthy one too..

Pulka stay good at room temperature for upto 2 days, place each roti between wax paper and put it in the zip lock bags...It can be served with almost any veg (Broad beans subzi)and non veg sidedishes and this is the every day food in every indian homes... Kids like to spread some jam or butter or sugar on the pulka, roll it and have it...

Preparation time : 10 mins 
Resting time : 30 mins
Cooking time : 5 mins for each flukas
Makes : 10 to 12 nos
Recipe cuisine : Gujarati 

INGREDIENTS :

Whole wheat flour / Atta - 2 cups
Salt - 1 tspn
Oil - 2 tbspn
Milk - 1/2 cup
Warm water - as needed

FOR FILLING :

Broad beans subzi / Avarakkai subzi - as needed

METHOD :

  • Take the flour in a mixing bowl and then add in salt, oil, milk, and mix with your hands..
  • Then add in warm water little by little while mixing every thing together. 
  • Knead to form a soft dough. cover it with bowl and let it rest atleast 30 mins.
  • The dough became very pliable after resting.
  • Make lemon size ball out of the dough.. Dip each ball into the dry flour and roll into circle..
  • Heat a tawa in medium flame, place roll ed out roti on it..
  • After white spot appear, flip the roti wait till you have light spots on the other side too..
  • Now remove the pulka from the tawa and place it on direct flame (using tongs).
  • The pulka immediately puffs up like a balloon. Flip it over and cook other sides too.
  • Remove it from it as soon as you see brown spots...
  • Make the rest of the pulka in the same way...


FOR FILLING :

  • First prepare your veggies which you have to filling in the pulka fulka..
  • I used Broad beans subzi for the fillings...
  • Take one pulka flat bread on the place and spoon with some broad beans subzi and roll it into cylinder shape..
  • Now cut it into two half and serve hot...

PICTORIAL :



Take wheat flour in a mixing pan
Add some salt
Some oil 
1/2 cup of milk
Add water slowly to form a soft dough
Now it's ready 

Cover it with a bowl and rest for 1/2 hour

Roll into balls

Take a ball and dip it in the flour
Add make it to a circle
Place it on the heat tawa
When it lightly puffs
Flip over and wait to form a brown dots 
Now remove from the tawa and place it on the dirrect flame
Puffs up like balloon 
See hoe it's come
Then flip to cook other sides too
Prepare the rest of the pulkas
Prepare your veggies
Take a pulka fulka in a plate
Spoon some subzi
Roll it
Like this and cut into two half
Now it's ready
Serve hot
