South indian style Vendakkai poriyal / Bhindi fry recipe is very common in our indian cooking. It is very easy and simple dry preparation served as a sidedish for lunch.... South indian lunch menu doesn't complete without this main side dish... At home every one's like poriyal so daily or the other day i make poriyal or stir fry for lunch.. Simple rasam and a poriyal makes our lunch more comfort and filling..
Vendakkai poriyal is my kids favorite poriyal..He love plain rice mixed with vendakkai poriyal and generous ghee. The vendakkai has slimy nature and needs little care and patientceto cook it perfectly. If you can follow these recipe, then you can make it super crispy and tasty vendakkai poriyal without slimy texture and taste...

INGREDIENTS :
Vendakkai / lady's finger - 300 - 350 grams
Turmeric powder - 1/2 tspnGrated coconut - 1/2 cup
Salt - as needed
Coconut oil - 1 1/2 tspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Small onions / shallots - 4 (finely chopped)
Curry leaves - few
FOR MASALA :
Red chilli - 4 nos
Garlic - 1 cloves
Cumin seeds - 1/4 tspn
METHOD :
- Grind the grinding items into paste.
- Whip the Lady's finger well with the kitchen towel and trim both ends and cut it into 1/2 inch thickness..
- In another kadai add oil, mustard, urad dal, chopped small onion, curry leaves.
- Add in chopped lady's finger and mix for a min...
- Add in some turmeric powder and toss lightly...
- Fry them for 6 to 7 mins untill they get brown, and add in salt and give a mix...
- Now add in grinded masala, and toss well..
- In a low flame or till the raw smell is gone..
- Now add fresh grated coconut and toss them.
- It's ready to serve..
PICTORIAL :
Take a fresh orka
Wipe the lady's finger well
One by one on the kitchen towel
Then chopped it
Now heat a pan with oil
Add mustrd and urad dal
Some curry leaves
Chopped shallots
Toss lightly
Now add in chopped lady's finger
Some turmeric powder
Toss lightly on low flame
Toss well
Now add in salt
Toss lightly and cook it on low flame
For about 7 mins or till it's cooked
Now add inmasala paste
Toss lightly till raw smell is gone
Now add in coconut
Toss well for 5 mins in low flame
Now it's ready
Serve hot...
