Punjabi chole masala


Punjabi chole masala or chena masala is most easy ane yet lip smacking punjabi chole recipe. This is one of the most tried and tested chole recipe. Here is the recipe which gives a good balance of spiciness, taste and flavour.. So i decided to update this in the post too... It is my mom recipe in our school days she prepared this chole masala for poori...Me and my sister enjoyed it...


I have already post Chola masala and Chola puri in my blog, you can also visit it... In that chola masala spices are roasted till they get extra browned and are later ground. This masala is blend with onion and tomato, that makes the dish more flavour ful...But this recipe we grind all the veggies like onion, tomato, shallots are combained to toss brown in colour which gives awesome taste while we having with chapathi or pooris...


There are many variation of making chole masala but I liked this punjabi chole masala the most.... So I hope that you must give a try and comments about this,....

Preparation time : 15 mins
Cooking time : 30 mins
Serve - 4
Recipe Cuisine : North Indian 

INGREDIENTS :

Onion - 2 large (sliced and grind)
Tomato - 3 (sliced and grind)
Shallots / small onions - 10 (grind)
Chich peas / kabuli chana / white chana - 1 cup (Cooked)
Potato - 1 large (cooked and mashed)
Ginger garlic paste - 1 tspn
Chilli powder - 1 tspn
Coriander powder - 1 tspn
Garam masala powder - 1 tspn
Salt - as needed
Coriander leaves - few (chopped)
Oil - 3 tbspn
Water - 1/2 cup (if needed)

METHOD :

  • Rinse and soak chana  in water over night or up to 8 hours. Drain it and add to the pressure cooker with salt and cook it for 4 whistle.
  • Then turn off the heat, lets the steam go all by itself. Now open the cooker and set aside.
  • Prepare all grinding items given in the ingredients and keep aside..
  • Now cooked a potato and mash well.. keep aside too.
  • Heat a cooker with oil and add in onion paste and toss well till it became dark brown..
  • Then add a spoon of ginger garlic paste and along with the onion.
  • Now add in shallots paste / small onion toss well for 2 mins.
  • Then add in all spices powder and mash potato and toss well..
  • Then add in grind tomato, salt and cook well tuill the raw smell is gone..
  • Now add in cooked chickpeas and mix well with onion tomato gravy for 5 mins..
  • If you needed add water to that otherwise close the lid and pressure cook for 2 whistle..
  • When it's subside open carefully and give a mix and add in chopped coriander leaves and mix well.
  • Now served with chapathi or poori...

Take onion 
Sliced them
Add to the blender 
Make a paste and keep aside
Then take tomatoes 
Chopped
Add to the blender
Make paste
Peel shallots and add to the blender
Make paste and keep aside
Cooked the chickpeas
Cooked potato and mashed well
Take your spices powder
Take a pan
Add in grind onion paste
Toss well
Toss well in low flame
Toss well
Till it became brown in colour
Add in ginger garlic paste
Toss well along with onion
Add in grind shallots paste
Toss well till brown
Add in all spices powder
Add in smash potato
Toss well
Add in tomato paste
Toss well
Add in some salt
Toss well
Bring to boil
Add in cooked chickpeas
Mix well
Pressue cook for 3 whistle
Now it's done
Then add in chopped coriander leaves
Toss well
Now it's done
Serve hot
