Carrot corn pulao is a favoured rice made with sweet corn, carrot, basmati rice and various indian spices. Today I tried this tasty and heathy rice recipe for lunch and it came out so well.....
My kids love the colour of the rice dish and the golden yellow sweet corns. This recipe is so simple and gets ready very quickly. Sure every one at home love this complete one pot dish....And this is very nutritious because of all the vegetables and sweet corn kernels in it....adding milk to it gives exellant sweet taste....

Serve - 4
INGREDIENTS :
Basmati rice - 2 cup
Water - 1 cup
Milk - 1/2 cup
Cinnamon - 2 sticks
Fennel seeds - 1/2 tsp
Fresh corn / frozen whole corn - 1 cup
Ghee - 3 tbspn
Ginger garlic paste - 2 tsp
Green chill - 2 - 3 (sliced)
Carrot - 1 (sliced)
Capsicum - 1 (cut into squares)
Onion - 2 (sliced)
Pepper powder - 1 tsp
Salt - as required
Coriander leaves - ( chopped)
METHOD :
- Wash and soak basmati rice in a water for 10 mins
- Chopped the veggies into slices, Now let's start cooking .
- Heat ghee in a presure cooker add chinnamon, fennel seeds allow to fry.
- Now add in sliced onions, green chillies and saute it well untill it became golden.
- Then add capsicum, carrot, sweet corn, and cook it for 5 mins.
- Now add in ginger garlic paste and saute it till raw smell disappears.
- Then add salt, pepper powder, chopped coriander and add in soaked rice and mix it well with vegetables.
- Now add in 1 cup of water, and 1/2 cup of milk and mix together and close the lid.
- Whistled it for 3, when it subside open it and fluffy gently.
- Now it's ready, so plated it with a cup of egg rezala.

Take your ingredients
Soak the rice for 10 mins
Drain it after 10 mins
In pressure cooker add ghee
Cinnamon, fennel seeds
Then add in sliced onions, chillies
Fry till golden
Now add in capsicum
Sliced onions
Frozen sweet corn
Ginger garlic paste
Some salt
Pepper powder
Chopped coriander
Add in soaked rice and mix well in the ghee
Now add in 1 cup of water
And 1/2 cup of milk
Mix well
Whistled it for 3
After it subside open the cooker
Now it's ready
Serve hot with egg rezala
