Rava kesari


Rava kesari is a popular south indian sweet made from semolina during the festival season as well as the celebratary days. It is common serve in south indian marriages as take part in morning breakfast. my mom prepared this kesari for my family... and we the best fan of this dish... still it is a popular delicious sweet.


It is considered to be the easy to make sweet, all experienced cooks like mom, for me too luckily i have not struggled much to learn making it...But i have seen many who run into trouble or don't get it right. The major trouble you get when making is getting lumps. There are two stages in the process where there are chances to get lumps.. Once is while adding rava to boiling water and the second one is while adding sugar to cooked rava. But thekey is add slowly rava or sugar and stir properly & constantly....


For me i love making sweets, I love each and every process we do and I enjoy the out come. Its every time like how a person feels the success... Now i making wounderful kesari you just follow my steps and make a delicious rava kesari at your home....

INGREDIENTS : 

Rava / sooji / semolina -  1 cup
Sugar - 1 1/2 cup
Water - 2 cup
Yellow food colour / kesari colour - 1 pinch
Cardamom powder - 1 pinch
Ghee - 1 cup
Cashew - 5 nos
Kish mish / sultanas - 8 to 10 nos

METHOD :

  • First add rava to the thick bottom pan or non stick pan and then add a spoon ghee and roasted for 5 mins.
  • Then add in water and keep stirring simutaneously. 
  • Take care no lumps are fromed keep in medium flame....and then add in sugar mix gently...
  • Add in kesari colour powder to that and mix well. 
  • Keep in low flame and cooked for 3 - 5 mins or untill the rava is cooked well.
  • In another pan add ghee, cashew, kishmish and fry it lightly and keep aside.
  • Stir in medium flame and cardomom powder and mix well, still the kesari forms as a whole mass ( doesn't stick to the pan at all).
  • When it is finished add roasted cashew and kishmish on the kesari and mix gently.
  • Now the yummy rava kesari is done.....


PICTORIAL :


Take rava in a pan
Add in a spoon of ghee
Toss it well
When the colour is lightly change 
Add in water
Keep stir simultaneously and no lumps should be formed
Add in sugar
A pinch of colour powder
Mix well and keep it on low flame for 5 mins
When it done add in cardomom powder
When it doesn't stick on the pan at all sides
In another pan add ghee, cashew, kishmish
 Toss well
Add in a spoon of ghee and mix gentle
Add in roasted nuts 
Now its done
