These days I perfer to cook very easy recipe and get out of the kitchen quickly. I usually take this along with chapathi but well goes with sambar rice / lemon rice / curd rice. This can be made with any variety of brinjal / egg plant whatever is available based on the season.
Preparation time : 10 mins
Cooking time : 20 mins
Serve - 4
INGREDIENTS :
Brinjal / egg plant - 7- 8 nos (cut into bite pieces)
Chilli flakes - 1 tbspn
Garlic paste - 1 1 tspn
Onion - 2 small size (chopped)
Sambar powder - 1 tspn
Garam masala- 1 tspn
Salt - as needed
Gingelly oil - 3 tspn
METHOD :
- Clean brinjal and cut them into bite size pieces.
- In a pan heat oil, garlic paste and toss well untill raw smell gone.
- Then add in chopped onions and brinjal and toss it well in the oil.
- Cover and cook it for 10 mins till the oil separates.
- Add in salt, chilli flakes, sambar powder, garam masala powder and fry them in slow flame for 15 mins untill it's done.
- Stir it often so that the masala get's mixed evenly.
- Now it's ready to serve with rices.....
PICTORIAL :
Take brinjal and clean it
Cut it into small pieces
Now take your ingredients
Heat a pan with oil
Garlic paste
Then add in chopped onions
Toss well untill transparent
Add in brinjal
Toss well for 5 mins
Close it and cook
After 5 mins open the lid
Once mix lightely
Add in salt
Chilli flakes
Sambar powder
Garam masala powder
Mix lightly
Cook it for 15 mins in low flame
Now it's ready
Serve hot
