Puran Poli



Puran poli is a very popular sweet in maharasthra It is one of the delicious and famous and traditional sweet prepared during diwali  and i always make suzhiyam for diwali but this time i make poli I always make a bit more than needed and keep to my son's friends around my home. I am not expect in roling poli but Ihave improved than before now! Thanks to raks which have a good pictorial to learn the technique and have drool worthy.


My mom in law says using ghee gives perfect taste opolis. You can use sesame oil too. I used sesame oiland ghee while cooking poli. I also have a stuffing which is help to make suzhiyam also... so try this sweet and enjoy the poil.

INGREDIENTS :

Maida / All purpose flour - 1 cup
Sesame oil - 1/4 cup
Ghee - 4 tbsp
luke ware water - 1/4 cup
Salt - 1/4 tsp

FOR SWEET POORANAM :

Channa dal - 1/2 cup
Jaggery - 1 cup ( reduce if you are not sweet toothed)
Coconut - 1/2 cup
Elachi - 4 powdered 

METHOD :

FOR POORANAM :
  • First let's make pooranam for that pressure cooker channa dal upto 3 whistled.
  • Drain it and grind it into a coarse powder and keep aside.
  • Take jaggery in a heavy bottom vessel. Pour some water to immerse it...
  • Heat when it dissolved completely Filter it in a metal strainer and again heat the jaggery syrup When it start boil add in powdered channa dal, coconut and elachi. stir continuously without forming any lumps. 
  • Sooner the stuffing will get ready. Keep stirring well till the mixture start leaving the side of the vessel.
  • Transfer the container to a dry air tight container and you can store thin for one week.


TO MAKE DOUGH :



  • Take flour in mixing bowl and add oil and salt and rub it well.
  • Sprinkle some ware luke water carefully and make dough. 
  • Since we add oil a lot and keep kneading for atleast 10 mins.
  • Now covered it with warp paper and i will recomend to make dough in morning and poli in the evening
  • Now the dough is ready to make poli.
  • Make equal sized ball of dough and pooran too.
  • Flatten the dough ball to a thick circle and place the puran ball in the middle and cover it as shown in the pic.
  • Flatten again using the ghee or sesame oil and flatten carefully till the dough spreads and cover the pooran as a thin layer. 
  • Heat tawa and transfer this poli to the tawa and press it with soft kitchen towel to puff.
  • Cook on both sides till golden brown spots appear on the polis. 
  • Use ghee 1/2 tsp each side while cooking. Keep stacked as you make the polis untill you finish making them all. 
  • Top with butter if desired and enjoy hot.

PICTORIAL :

Take channa dal in a pressure cooker
Add in some water
Whistled it for 3
When it supside
Drain it
Add to the blender
Puree it into corase form
Add in jaggery
Add in some water
When it completely dissolved strain it ( i forget to take photo)
Again add in same pan and add powdered channa dal
Add in elachi powder
Add in coconut 
Mix well untill it became thick
Transfer it into a bowl and keep aside
Add flour in a mixing bowl
Add in ghee
Add in a pinch of salt
Mix well
Add in warm water and mix well
Now the soft dough is ready
Cover it with a plastic wrap for atleast 5 hours
Now it's puffs up
Make equal parts of dough and pooran
Take a ball of dough and flatten it
Place a pooran ball in side it..
And cover it 
Like this
Add flatten it into a thin circle
Place it on the heat tawa
Add ghee
Press it with kitchen towel on both sides
See how it is puffs
Cook untill brown spots appears
Now it's ready 
Serve hot 
Enjoyed it.....
