Coriander milky naan



This coriander milky naan is the recipe from the british chef simon rimmer. Naan is a traditional flat bread - particularly popular in north of india, and it is one of the real treats of the cuisine. i enjoy it in a restaurant and i wants try it at home... I always wanted a naan recipe that taste is really similar to restaurant style.



This traditionally naan bread are made in a tandoor oven and has yeast it in... But i didn't use tandoor and yeast. Intially i use milk to make a soft dough.. But the result is amazing... You also have to try it to see the magic...It is a milky naan i added some fresh coriander in this to make more flavourful. There are different types of naan, i will post them soon....so keep checking....

Preparation time : 15 mins
Resting time : 1 hour
Cooking time : 2 mins per naan
Makes : 12 - 15 naans

INGREDIENTS :

All purpose flour / maida - 3 cup
Milk - 1.5 cup
Sugar - 1 tspn
Baking soda - 1 tsp
Fresh coriander leaves - few (finely chopped)
Salt - as needed
Oil - 2 tsp
Butter - for smearing on naan

METHOD :


  • Take milk in a mixing bowl, add in sugar, sugar, baking soda, 1 tsp of oil, chopped coriander leaves and mix well.
  • Add in flour and knead into a soft dough. Now drizzled the remaining 1 tsp of oil over the dough and knead it one time. 
  • Cover it with wrap paper and let it rest for 1 hour. After 1 hour again knead it and punch a little dough and roll it into circle.
  • Now use your rolling board to elongate the circle, so it forms into a traditional naan bread shape.
  • Heat a tawa ( handle tawa) Now dip your finger in water and spread water on top of the naan bread.
  • Once applied water, flip it on the tawa and show the top side over the open flame. show it on all side,
  • Now you can see some black spots on the naan.
  • Apply some butter on top of the naan.
  • Remove the naan to a plate. Serve hot with your favorite curry. 
  • I serve it with chilli mushroom gravy.

NOTES :

  1. Dont over cook the naan, if you over cook it will get cooked and leave the pan.
  2. Use handle tawa, so it is easy to flip the tawa.
  3. Adding milk to it gives exellant taste to the dish.
  4. If you want add more flour and increase the ingredients.

PICTORIAL :


 Take your ingredients
 Milk in a mixing bowl
 Add in sugar
 Baking soda
 Some salt
 1 tsp of oil
 Chopped fresh coriander
 Then add in flour
 Mix that to form a dough
Drizzled some oil 
 Knead that
 Cover it wrap paper for 1 hour
 Looks it has risen well
Again knead it 
 Dust rolling board and small portion of dough
 Roll it and just elongate it into a naan bread shape
 Now dip your finger in water
 Apply water on top
 Place the wet side over the hot tawa
 Once you see bubbles on top 
flip the naan over direct flame
 Like this
 You get black spots like this
 Apply some butter on top
Naan is done
Serve
