Suzhiyam / Seeyam




Seeyam / suzhiyam is one of diwali special recipe that we make every year. When i made puran poli, I reserved pooranams for making the suzhiyam and is a delicious, deep fry snacks stuffed with channa dal pooran. This is my sister favourite items, she told my mom to make it often at home when she was in holidays . It is very easy to make and we usually make suzhiyam specially on diwali day and ganesh chaturthi. We make suzhiyam easy if the pooranam is ready.


In this suzhiyam the whole channa dal and jaggery is for filling and using maida as an outer cover. It was in my list for longtime and finally got change to try them, It came out perfectly. My amma makes it so perfectly and also she used to make perfect suzhiyam while making it...

INGREDIENTS : 

FOR POORANAM :

Channa dal - 1 cup
Jaggery - 1/2 cup
Seasame - 4 tbsp
Water - 1/2 cup
Cardamom powder - 1 tsp

FOR OUTER WRAP :

All purpose flour / maida - 1 cup
Salt - 1/4 tsp
Water - as needed
Oil - for frying

METHOD :

  • Pressure cooker channa dal upto 3 whistle, cool down and grind in blender or mash it well. keep aside.
  • Take jaggery in a heavy bottom pan. Then pour water just immerse jaggery.
  • Heat it and when jaggery dissolved completely add in cardomom powder, filter it in a metal strainer to remove impurities.
  • Take powdered channa dal and roasted seasame seeds in a pan, 
  • And then add in jaggery syrup and mix well, And make it into small balls.
  • Now the pooranam is ready to make suzhiyam.


FOR OUTER WRAP :

  • Mix maida with water and salt to idly / dosa batter constistency..
  • Make balls of jaggery stuffing.
  • Dip these balls one by one in the batter and immediately drop in hot oil.
  • Fry for a minute, remove from oil and drain excess oil in paper towel and enjoy eating...



PICTORIAL :


Take channa dal in a pressure cooker
Add water on it
Whistled it for 3
It done
strain it
Add to your blender and grain it
Mash it into coarse form
 Take jaggery in thick bottom pan
 Add some water
 Allow to dissolve
Add in cordamom powder and mix well
In a mixing pan add dal and seasame seeds
Add in strained jaggery syrup
Mix well
Make it into small balls
Now make wrap for that add maida in a bowl
Alittle bit of salt
Some water 
Make it to idly dosa consistency
Dip the balls in the batter
Now it's fully coated with batter
Add to the fry pan with hot oil
Fry for a min
Remove from the oil and drain excess oil
 Now its done
Serve..
