Podi Idli Recipe / Podi idli masala


Podi idli - Have you ever tasted them at hotels? It's just yum with gingelly oil and podi flavour through a little spicy I love the core... When i was planning for kids idea lunchbox for my kids this podi idli recipe is came to my rescue for that week, I added veggies to make it whole some and it turned out super great...  


My aunty enjoyed it well and ask me to prepared once a week.. My kids pfered that to prepared this for their lunchbox... Here is my version of podi idli recipe...So I hope that you must try this recipe and comments about the simple as well as yummy kids recipe.....

INGREDEINTS :

Mini idli - around 30
Idli podi - 2 tbspn
Ginger garlic paste - 1 tspn
Onion - 1 big size (chopped)
Carrot - 2 (grated)
Capsicum - 1 tbspn
Curry leaves - few
Coriander leaves - few finely chopped
Cashew - 7 (broken and fried in ghee)
Salt - as needed

TO TEMPER :

Gingelly oil - 1/2 tspn
Mustard - 1 tspn
Urad dal - 1 tspn

METHOD :

  • Pour the idli batter into the mini idli mould and steam the idli for 7 min... keep aside..
  • In a mixing bowl add the idlis, drizzle some idli podi, mix well and set aside..
  • In a kadai heat oil, add mustard, urad dal and let it splutter..
  • Add in onion, ginger garlic paste and saute for a mins till onions turn golden brown..
  • Add in carrot, capsicum, salt and some curry leaves.....
  • Saute it for few mins till raw smell of the veggies leave..
  • Add the podi idli and toss well... 
  • Finally add coriander leaves and ghee fried cashews..
  • Give a quick stir mix and switch off...
  • Serve warm...


NOTES : 

  1. You may adjust the idli podi according to it's spiciness..
  2. Adding veggies is purely optional and also add other veggies of your choice..
  3. Make sure idlis are slightly porous so that it absorbs the podi well... 
  4. So use the first batch of idli batter for best results...
  5. If you donot have mini idli mould you can use regular idli mould and cube them...


PICTORIAL :


 Prepare your mini idli
 Take them in a bowl
 Add in idli podi
Mix well
 Heat a pan with oil
 Add in mustard and allow to splutter
 Add in urad dal
 Add in onions
Prepare your veggies
 Add in ginger garlic paste
 Toss well in the oil
 Add in carrot and capsicum
 Little bit of salt
 Some curry leaves
 Toss well
 Now add in podi idli
 Mix well
 Add in coriander leaves
 Mix evenly
 Add in roasted cashews
Mix well
 Serve hot
Garnish with some nuts
 Enjoy...
