Sakkarai Pongal / Sweet Pongal


Sakkarai Pongal is a traditional and delicious sweet recipe with sweetened rice dish made with the addition of jaggery and flavoured with cardomom. The sakkarai pongal is most often made with ven pongal for the pongal festival. It is a festival that is spread over four days... Pongal in tamil means something that is overflowing..



The act of boiling over of milk in the clay pot is considered to denote future prosperity for the family.. This pongal made with raw rice, nuts, ghee, and jaggery makes it a wholesome sweet to be served for god during the festival. It is a savour and as a sweet along with your afternoon meals..Soon i post this recipe...

In a fresh banana leaf along with a piece of Sugarcane, Coconut, Banana, Panam kizhangu, serve it to the crow in the morning.... 



Sakkarai Pongal is made with jaggery and raw rice and mildly flavoured with cardomom powder.....Absolutely delicious...

Preparation time : 10 mins
Cooking time : 30 mins
Serve - 4

INGREDIENTS :

Raw rice - 1 cup
Water - 4 cup
Jaggery - 3 cup
Cardamom powder - 1 tspn
Ghee - 100 ml

FOR SEASONING :

Cashew - 7 to 10
Kishmish - 6 to 7
Ghee - 2 tbspn

METHOD :

  • Take a cup of raw rice and wash well and cook in pressure cooker for 4 whistled..
  • After 2 whistled simmer the flame for another 2 whistled...
  • Allow the cooker pressure to release naturally. 
  • When it subside, open the lid and add in jeggery and mix well...
  • Now keep it in a medium flame, allow the mixture to boil.
  • In another small kadai add in ghee and add in cashew and kishmish and fry it lightly..
  • Add in roasted nuts and cardamom powder to the pongal,and mix well...
  • First it is very liquid afterthat it became thick..
  • Stir well on medium flame and add in little amount of ghee and mix well.
  • Again stir it well and again add in ghee in the pongal and mix well.
  • Now the pongal became thick and not to stick in the pan..
  • The sakkarai pongal is ready... Turn off the heat and transfer the pongal to a serving bowl..
  • It is traditionally offered on a fresh banana leaf....


PICTORIAL :


Take a cup of raw rice
Wash well and add it to the cooker
Whistled it for 4
Now its done
Take some jeggery in a bowl
Add to the rice
Mix well
Allow to boil
Allow it to melt the jeggery
In another pan add ghee
Take few nuts
Add to the pan
Roast well
Till it became brown
Add to the boiled pongal
Then take cardamom powder
Add cardamom powder
Mix well
Add in little ghee to the pongal
Mix well
Stir continuously
Again add in little amount of ghee
Now the liquid is watery
Keep mixing the pongal
Stir well
Then ad in little amount of ghee
Mix well
Again add in ghee
See the pongal mix came thick
The pongal not to stick in the side of the pan
Now the pongal is ready
Serve hot in banana leaf
