Simple Mushroom Briyani


Mushroom Briyani is a spicy south indian style recipe.. First time we had a taste of this briyani at the pepper vine cafe during our visit in isha yoga centre.. There in tamil it is called as kalan briyani.. When we came back to home I wants to give it a try this delicious briyani according to our taste...


I searched for the mushroom briyani recipe while browsing and came across many recipes.. finally I decided to adapt the recipe from the youtube video.. Frying the maslas in the oil does impact a lot of flavour to the briyani.. So I think it of to give that a try and result was superb..

INGREDIENTS:


Button mushroom - 1 pocket (cut into medium size)

Basmathi rice - 1 cup (soaked for 20 mins)
Cinnamon - 2 (small sticks)
Onions - 2 (sliced)
Tomatoes - 3 (sliced)
Capsicum - 1 (sliced)
Ginger garlic paste - 2 spn
Green chillies - 4 (slit)
Onions paste - 2 spn
Coconut milk - 1/2 bowl
Ghee - 4 spn
Coconut oil - 5 spn
Coriander leaves - few (chopped)
Mint leaves - few (chopped)
Salt - as needed

SPICES POWDER :


Chilli powder - 2 tspn

Coriander powder - 2 tspn
Garam masals powder - 1 tspn
Cumin powder - 1/2 tspn

FOR GRINDING:


Coconut - 1/4 cup (fresh grated)

Cashew - 7 nos
Mint leaf -  few
Coriander leaves - few

METHOD:



  • Take your ingredients, cut all veggies...
  • Wash the rice and soak it for 20 mins. keep aside.
  • In a pressure cooker, add ghee and coconut oil..
  • When it heat add cinnamon sticks on it, then onions and chilli..
  • Allow it to fry till its became transparent, then add in ginger garlic paste, onion paste.
  • Fry it for few sec, now add in all spices powders..Toss well.
  • Now the smell is really good, then add capsicum, chopped tomatoes and mix well.
  • Then add grinded paste too, now add the main ingredient that is mushroom...
  • Now add in soaked rice, coriander leaves and mint leaves..
  • Add in coconut milk and salt..Close the lid.
  • Whistle it for 3 times and swich off the flame..
  • Leave it 15 mins, the mushroom briyani is ready
  • Serve hot with mushroom pepper masala dry..

PICTORIALS:




 Take all ingredients,
 Take grinded items in a plates
Heat pan with oil
 Add in cinnamon sticks
 Then add in sliced onions and slit chillies
Onion paste
 Add in ginger garlic paste
 Take all spices in a plate
 Add it to the tossed onion
Toss well and then add capsicum
 Now add in tomatoes
 Then grinded paste

 Take rice in a bowl, wash it well, 
soak it for 20 mins
 Add in mushroom
 Add soaked rice on it and add coconut milk
 Add in chopped coriander and mint
 Now it all most ready
Cover it and whistle it for 3
 Now it's done
Fluff it lightly
Now mushroom briyani is ready
